We went on a road trip with the intention of just going to Heart Mountain in WY (hubs parents were confined there during the war), via Yellowstone NP.
In Cody, WY we ran into a retired couple who were just traveling in a round about way with the ultimate plan to go to a graduation in Bellingham, WA. They had just been to Mt Rushmore.
So we went to Mt Rushmore then drove down through CO and across to Grand Canyon driving through little towns along the way but mainly driving.......I promised never to leave home again.

I was never more happy to be home after barely sleeping in motels and eating not so great food.
Eating meat is much easier when crossing the desert and also in beef country like CO and WY.
I ate many side orders of beans and guacamole. Thank goodness I brought PB and apples, oatmeal, sunflower seeds, cinnamon, raisins so breakfast was covered. At one point I refused to go to a restaurant and bought a loaf of Dave's killer bread and Lilly's hummus which made a nice dinner and filled several lunches/brunches.

Oh, in Santa Fe we found Whole Foods and I just wanted to kiss the parking lot. We ate both lunch and dinner there. It was the best food of the whole trip.

Home now happily eating my own cooking. Lost some weight which should come back easily, I hope.
Food is just so much better on the west coast....even in the markets. Of course, there are pockets but it is really hard or else I am just really spoiled.

It must be Friday, I wanna chat

TGIF

I went to the wound care doc...been going every week for my twice broken toe and its looking pretty good. The doc says maybe only one more week with the big ole boot and then I get to wear the shoe, their shoe again, but its way better than that spaceman boot.

What's everyone doing on the weekend?

This evening after work and tomorrow afternoon after work, I am having my truck worked on, getting new shocks, etc and an oil change, lube, whatever it needs. On Sunday I have to move some tools and finish the honey do chores.

Next weekend, I will be doing some building.
Hopefully, the next weekend, I get a break.

This Texas heat is killing me. I am huffing and puffing just from being outside for an hour...I'm anxiously awaiting fall.

I wanted to get a pool this year, but with the foot and walking problems, I figured it would be too much trouble to climb in and out of. Last year was the first year we didn't have a pool in a long time. I think the next pool I buy will be in in ground type instead of the above ground kind I usually buy. The heat here kills the liner after a year or two and its very hard to keep the algae out. Then there is the constant maintenance which I just wasn't up for. But I do miss swimming and cooling off in the pool.

That's my chit chat for today.

Wow, Nigel, sounds like you're back to normal.

We bought another manufactured home in a 55+ park and the original carpet is still in the bedrooms. There is dark red carpet in the living/dining room and it is magnificent so I'm moving it to the bedrooms and installing plank vinyl in those areas.....EXCEPT that the hubs want the plank in his room.

So today I am doing his room.

We had two windows that had lost their seal so those are being repaired and in the mean time we are replacing some siding under them.

I get the problem with the heat. Chico was so hot everyday that after 10 am everything had to be indoors.

Even if Roseburg gets to be over 100, at least it's not everyday. So now we have the place in Chico for winter and will come to OR in summer. The Oregon coast is closer, too, for those times when we need even cooler weather.

I think its pretty cool that you get to travel and live in 2 different places each year.
When I retire, my wife wants to do the same thing.
I just want to travel and see the sites. Either way, we will work it out.

Decided to check in the forum more often to keep me on track. Some very interesting stuff here! i'm not a vegetarian per se but i'm very interested in lowering my meat intake to only once a week.

Yes, welcome MisterG. You don't have to be a vegetarian to post here--everyone is welcome.

There are some great vegetarian recipes sites out there if you google them.

I use a lot of meat substitutes for burgers, tacos, spaghetti and stuff like that, but if you want just vegetable substitutes, the plant based recipe sites have good recipes using portabella and other mushrooms, eggplant, beans, stuff like that.

I tried the renal mac n cheese recipe and I didn't care for it.
Perhaps my pasta was old cuz it had a strange taste. I used Dreamfields pasta and I had had it a while.

I'll try it again later with different pasta and see how it is.

Its an easy recipe:

2 c. uncooked pasta
5 oz cream cheese
4 oz can green chilies

Cook pasta. Mix in cream cheese and chiles and heat. Eat.

If I like it the next time, I will post it in the test recipes thread.

Daiya Pizza

The Diaya Pizza's were on sale at Sprouts on Wednesday fort $4.99 each, so I got 4 of them. I got 3 different kinds. 2 of the 3 cheese type, one vegetarian pepperoni, and one fire roasted veggie.
So...I hope they are good. At least they are plant based, so that counts for something.

I also got some new kind of vegetarian cheese at Walmart the other day, but I don't recall the name of it right now. I will post in product reviews after I try it.

Last night I went to Walmart, so I looked for the veggie fries broccoli and potato, but couldn't find any.

Instead, I found broccoli tater tots (no potato in them), corn tater tots, and cauliflower tater tots, so I got all 3.

Then I was surprised to find cauliflower rice & cauliflower mash as well.

The frozen department just keeps getting better and better. It definitely beats getting fast food.

This makes my dinner cooking easier, hopefully they are good.
I'll write reviews later after I try them.

I guess I won't be giving up cheese completely for a while, if ever.

I'm not blaming her, but my sweet wife just told me she ordered a whack of cheese for us just cuz she does every year for our Christmas Cheese Party. She got me 5lbs of brick cheese just cuz that's my fave and I don't have to share that at all. I'm too selfish to give that cheese away...lol -- and it ain't cheap either. (I might be a bit cheap on spending.)

And she's not a fan of it. She loves the super sharp cheddar types...me---not so much. I like the milder cheeses.

I am (hate to admit it, but) excited for the cheese to arrive cuz she got me (hangs my head in shame) bacon cheddar, jalapeno pepper, bellavitano black pepper, fresh parmesan, pepper colby, onion, vegetable colby and others. I had the bellavitano black pepper cheese last year and it was delicious.

In truth, I don't want to give up dairy. But I will still eat vegetarian cheeses that I like. I guess cutting down on real cheese helps somewhat...maybe it does?

Going to try that.But One thing, I will not try again{and that was years ago. and that is Soy Hot dogs. They were bad.
But since I'm going and trying to go> Flexitarian{Were You can have some meat once in while. I just might get a hot dog when I'm out.{Limit meats.
Also when I make husband hambuger patties. I will do my 3 oz. meat and add black beans, chopped fine green peppers and onions and see how that is{Wraped in lettuce leaves.
But I think might be good for more beans then meat and it should hold well.
I have not tried the Vegetarian cheese or Mayo. {And still might not. Just watch the fat and cals. for me. And I eat alot of greens@ beans beats at times. and Need to get back with green smoothies.
and veggies and low sugar fruits.
Eat healthy and do watch what u buy. If we think of our bodies as working machines>we will feed it better so cells can heal and work. Sugar and bad carbs not so much.
And move that body. It is a package .

I agree with what you said, kind.
For the tots, perhaps Google nutritional information to find out the calories?

The Morningstar farms hot dogs are pretty good. They are in the freezer section at Wal-Mart. I don't know what's in them.

Okay, I got the info.
For Green Giant broccoli tots, the calories are 110 for 6 pieces.
I don't know if that is considered high or not cuz I'm not used to counting calories. I know I probably should though.

Today is the day,I will try adding black beans to hamburger patties and see.
It should be healthier with beans.
Just might be hard to know calaries on them. But Once in while should be ok.
I love Morning star Veggie burgers.Have to work up and try the hot days.

There are some cauliflower and zucchini tots recipes floating around the net, but they all do use eggs in them. If you cant have the eggs, then perhaps the egg substitutes will work for you,;it might be worth trying a recipe or two. The ones I read were grain free.

In my mind, you could use cauliflower or broccoli or any type of squash, sweet potatoes, carrots, etc. as long as the veggies are ones you like.
