Holly, that sure sounds good!

I have already had an omelette, coffee, HWC, and Splenda which I have logged! I am going to try to limit dinner to 4 oz. of taco meat and lettuce. I need to see a drop soon. I walked yesterday, but ate too much. Tonight I will go to the gym which usually leads to a drop when I've been perfect with calories and carbs.

Chicken is in the oven and I'll report back after dinner BUT ... I threw together this for my husband's lunch tomorrow with some of the left over chicken:

8 oz cooked & diced chicken thighs/breasts
2 pieces of crumbled bacon
2 hard boiled eggs, diced
2 tablespoons of mayo
2 tablespoons of asiago cheese


Just combine! I loved it ... YMMV.

3 servings

386 calories per serving
27 grams of fat
37 grams of protein
0 carbs

I stayed on plan 100% yesterday with only 15 carbs. The scale rewarded me!

Tonight for dinner I'll have a repeat: 5 oz taco meat with 2 oz shredded cheese. I think I'll skip breakfast/lunch and just have my half-caf coffee, Splenda, and HWC.

Tonight is also massage night. Yay! This one is to celebrate the last 10 pounds lost. Since it's getting harder I'm going to start rewarding myself with a massage for every 5 pounds lost. It's the perfect reward for me.

The Bacon Wrapped, Cream Cheese Stuffed Chicken I made last night was pretty good .... here's the recipe:

1 boneless skinless chicken breast
2 tablespoons cream cheese
1 tablespoon green onion, Chopped
2 pieces bacon, Partially Cooked

Pound out Chicken breast so it is about 1/4" thick.
Mix together cream cheese and green onions and spread cheese mixture over 1 side of chicken breast.
Roll Chicken breast up to conceal cream cheese.
Wrap partially cooked bacon around chicken breast and secure with toothpick.
Place on baking sheet and back for about 30 minutes at 375.
Broil for about 5 minute to crisp bacon.


I changed it a little bit though. I used chicken thighs instead - I prefer the taste. I also added a little bit of shredded sharp cheddar to the cream cheese. And I had a super hard time rolling up the stupid chicken so ... I made a chicken sandwich instead. 4 oz top and 4 oz bottom. And then I wrapped the uncooked (I didn't partially cook like the recipe says) bacon around it.

I cooked them for 40 minutes at 370 because I felt they were meatier than the recipe called for - and still broiled it for about 5 minutes at the end.

Here's the breakdown:

8 oz skinless chicken thighs - 320 cal, 0 carbs
Bacon - 90 cal, 0 carbs
Sharp Cheddar (1/8th cup) - 55 cal, .5 carb
Cream cheese (1 oz) - 100 cal, 2 carbs

Dinner was a 2 egg omelette with 4 strips of bacon on the side

I did 3 miles on the elliptical.

Trotter, that bunless burger sounds good.

I had my steak cubes in sesame oil last night and had a low carb day overall. It was nice to wake to a little scale drop.

I had a veggie omelette this morning.

I'm not sure if I want to get something from the store or just eat the tin of sardines that's been staring at me from the shelf. If I go to the store I'll get chicken breasts and figure out what to do next.

I found a recipe I want to try tonight for Fish Taco Bowls! I'll tweak it, but I love the idea since I love fish tacos in the mayo sauce with lime juice. Yum yum yum!

The fish taco bowls were a semi-hit. The tilapia was really good, but I had too much cabbage in the bowl. My second helping just had the fish, tomato, onion, lime juice, and dressing. It was much better. A little cabbage would have been good.

The tilapia was so good, I'm getting more for tonight's dinner. I'll just have my doctored up half-caf until then.

Holy moly - this was a winner! I served it over a bed of riced cauliflower. (Changed it a bit from the regular recipe - the following is exactly what I did/used.)

4 slices of bacon
1 cup of sliced mushrooms
9 ounces of small cooked shrimp (I used Walmart's Great Value brand of frozen, extra small cooked shrimp)
1/2 cup heavy whipping cream
110 grams (1 package basically) of smoked salmon
Salt & pepper to taste)

Cut the bacon in 1 inch pieces
Start heating a cast iron skillet and place the bacon in it on a medium flame, cook stirring for about 5 minutes.
When the bacon is cooked but not crispy, add the sliced mushrooms and cook for 5 minutes, stirring often.
Now add the smoked salmon cut in strips, cook for 2 to 3 minutes
Add the shrimp and saute' on a high flame for about 2 minutes
Add the cream and the salt, lower the flame and let cook for 1 minute, or until the cream reaches the desired thickness.
Serve immediately.

4 servings

Per serving:
249 calories
15.7 fat
2.6 carbs
24.5 protein

If you google "how tilapia are raised" you will probably use a different fish. I couldn't believe what these fish are fed. I'll never eat them again.

Went to our favorite restaurant to celebrate DH's birthday. Ordered a lovely chopped salad topped with feta and seared cod. I really enjoyed it.

Judy, I was already skeptical because it was farm raised in China, and I don't trust China's quality-control or ethics, etc., but then I looked it up. Ewwwwww. Thanks for the heads-up. I'll look for something preferably wild-caught or at least farm-raised in America.

Tonight, btw, will be cage-free eggs cooked in butter. (I know free range are better than cage-free, but I'm making baby steps). This will get me to 15 carbs for the day. I want to get to a total of 35 pounds lost by Sunday since I've already booked my massage reward.
