A nice breading for chicken or fish

Hi, I was thinking about how to make cat fish and I came up with this. Probably it's been thought of before, but I thought I'd throw it out there anyway.

1/4 cup sesame seeds ground, using a coffee grinder or Magic Bullet
1/2 cup almond meal
3 tsp. chili powder
1/2 tsp. cayenne pepper
1/2 tsp. garlic powder
1 tsp. salt
Mix up with fork.

I dried off the cat fish, dipped in egg wash and then in the breading mix. Put some oil in frying pan and fried at low/med. I started off too hot and that side got kind of dark, so keep the oil on the lower side. An alternative would be to bake it at 375 for 20-30 min. The coating adhered well. The taste was pretty good, not too spicy, a little sesame seedy.

Ground pecan meal is also nice (instead of sesame seeds).
Green can Parmesan mixed in with the pecan meal and almond meal is very good, too.

Sounds good!

I make a generic breading for chicken, fish & pork with a combination of anything that I can grind into a rough flour. Specifically, I use ground sesame seeds, almond flour, pecan meal, green-can parm, ground flax meal & some ground pork rinds. Season with onion & garlic.

I "Greek" it with some lemon rind, oregano and pepper.

I "Mexican" it with Chili powder & cumin.

I "Italian" it with Oregano, basil & a little red pepper.
