Hootie or anyone else, try looking at different brands of the same foods. You'll find varying carb amts. As in the cream cheese. Another one is cr. of chicken and cr. of mushroom soups. Varying carbs in the Campbell's versus the Harris Teeter brand.

Omg. I sprinkled some Sukrin gold on one of these last night and torched it. Served with some sliced strawberries and almonds. Can you say Creme brûlée cheesecake? Delicious.

I only made 1/2 the recipe..six muffins. I used a small packet. Instead of 1/4 cup sweetener..I used the packet which measures about the same. I don't like it too sweet so I didn't add any more sweetener.

Making salted caramel today. I did add a teaspoon of my liquid sweetener this time. The batter was yummy...can't wait until tomorrow to try one.

Hubby and I restarted 3 weeks ago after 5+ years of no holds barred eating. Just past the cravings stage but at the point where we needed "something sweet". I remember this recipe as one of my "go to" back in the day. Glad I found this thread again.

These are in the oven! I cooked down some cranberries,lemon juice and splenda for on top! Today is my husbands birthday and he loves cranberries! Can't wait to try them with toppings!!!

A Great Recipe

These muffins are so good. I make them from time to time. They're great when you need a quick breakfast. Sometimes I will mash up a couple of strawberries to go on top.

They're really good u guys ! Every time I follow the Atkins diet I make them. Don't forget the cinnamon !

P.S. Don't eat more than one ☝🏾 a day, they can cause u to stall if u eat too many.

I just made some and they're in the oven now. I went to sprinkle cinnamon in the recipe though and got a bit much. I hope it comes out ok. It was impossible to get any of it out.

Made according to the recipe waaaay back on the first page. Didn't seem like it was really enough to fill a 12 hole muffin pan.... but I managed. They didn't puff up all that much, and after cooling (following various suggestions here), most of them are maybe half the height of the muffin cup. No indentation in the center though.

Taste was good, although a bit too sweet for my preference (this is based on one hour out of the oven). I'll cut the sweetener back in the next batch.

They're in the fridge now, hoping the taste improves as much as everyone says it will when they're thoroughly chilled.

I guess my question really is.... since mine are so small/short.... is there some secret I missed in the 30 or so pages that would have given me more lift... or should I just do this recipe and use a six muffin pan?

Made the original recipe yesterday...yummy! 20 minutes was too long in my wall convection oven. I took them out at 18 minutes and they were overdone. Next time I'll take them out at 15 minutes. So far we've had them with Polaner Fiber strawberry, and some pecans with Walden Farms caramel sauce.

15 minutes is what worked best for me too.

That is normal. It should be the consistency of cheesecake. Mine come out about 3/4" thick after they cool. Making only six would require longer baking, and would double the carb count per serving. These are small, but dense.
