Start Date: January 2007. Have kept weight off over 10 years.
Not a good idea. Mayo separates when thawed, leaving everything soggy, waterlogged, and generally unappealing. Additionally, for the egg salad, cooked whites become rubbery when frozen. Both of these are best made fresh.

What Cat says. Mayo does NOT play well when frozen, unless it's just part of a casserole or something - when it's a main character it's a mess when defrosted.

Also, the veggies, like celery and onion lose their "crisp" and become soggy.
