Again I have no pics to post. I have been lazy this weekend. I haven't wanted to cook. Hubby is grilling burgers tonight.
We went to see Avatar today. We prepared so we wouldn't be temted. I packed some macadamia nuts so I was ready. We got there and they were sold out. We went ahead and bought tickets for tomorrow. It is amazing that the movie is still selling out. I can't wait to see it, but I'll be good. I still have my nuts. We are having bbq pork tomorrow night. I'll get a pic posted tomorrow.

Yup, Just washed/dried them and fried them in a pan with some EVOO(made a little bath for them to swim around in!) On medium heat, tossed some salt on the GBs when they were in the oil, fried them up until they started to turn brownish, took them out, patted excess oil off...no fuss, no muss, took about 10 min...start to finish. Turned out great with a hamburger and some ranch dip.

Not Sure What To Call Them Muffins
This is my first time posting, so I hope I do it correctly. I have read all over these boards and have gotten such inspiration and some great recipes. I found this recipe from last year originally posted by *Carbkinky*. This is a takeoff of the 2 minute muffin recipe. It's the closest thing to 'bread' I've found so far. I used one this morning for a 'sausage biscuit' and it was great. I think they would be great to make sliders with or small hamburgers. Everyone is so encouraging on here and so inspiring to make this WOE a doable thing. I am type 2 diabetic and these recipes have been great for me, not only in losing some weight but, getting my blood sugar down to controlled number. Thank you all. Here's my adapted version:
3/4 cup almond flour 1 1/2 teaspoons baking powder 3 eggs 3 tablespoons butter, melted Dash of salt (I made these savory, but with Splenda you could make them sweet.) Preheat oven to 350 degrees. Spray a muffin top pan with Pam. In a bowl, melt the butter. Add the almond flour and baking powder. Stir in eggs and blend until smooth and all lumps are gone. Pour into muffin top pan. Bake at 350 for 15-20 minutes until golden brown. |

Pound chix breasts flat, brush with good dijon mustard, sprinkle w/ s&p then layer ham and swiss cheese and roll it up, fasten with toothpicks. Dip in beaten egg and roll in parm cheese mixed with italian seasoning. Bake on foil lined sheet pan for 30 min at 350 and voila! Chicken cordon bleu.

Ok, so here is what pizza looks like using an ordered low carb pizza crust from a low carb bakery.
It is a supreme to say the least...Ham, Pepperonni, Onion, Tomatoe, Black Olive, Mushrooms, The thinnest possible layer of pizza sauce, and Mozzerella cheese!!! OH MY, was it good!

Take your sf chocolate chips and just go around and around starting from the outside in. Bake at 350 for 20-25 minutes until set. Take out of oven place on cooling rack, slide knife around the outside of the cheesecake to keep it from splitting so bad. When cooled, refrigerate for 8-12 before eating. Enjoy!
