I made this last night. I think it'll be a new regular!!!
Hamburger Cabbage Casserole 1 lb lean ground beef 1 small head cabbage 1 can rotel tomatoes (can use regular tomatoes if you don't want the kick) shredded cheddar to taste brown the ground beef with spices preferred chop cabbage and add to beef until cooked down some throw in the can of rotel tomatoes after it's all cooked nicely throw in your cheddar to taste. the cheddar and juice from the rotel make a nice cheese sauce. this ended up being really good. Hubby, who hates cabbage, gobbled it and gave me the approval to make it again! Awesome!!!

OH MAN!
Chocolate Covered Nuts or Berries
1 container Walden Farms chocolate dip 2-3 tbsp coconut oil nuts or berries Melt coconut oil in microwave or saucepan. Add chocolate dip and mix until well combined. Dip your choice of nuts or berries into chocolate and put into fridge or freezer. Eat and enjoy! If you want a little sweeter, add a bit of Davinci's or stevia to it when mixing. I would keep the berry chocolates in the fridge and the nuts in the freezer, since storing nuts in the freezer keeps them from going bad. I say this to those that might make a big batch and attempt to keep them around for awhile. For those of us with portion control issues, dip only what you are allowed to eat and store the chocolate mixture back in its original container in the fridge.

Yes I do in fact. As I said, portion control. lol. This is a good ratio, since the jar isn't that big and you want to make sure to have enough coconut oil for it to harden right.

I'm back from Dallas and have so far copied off about 20 of these recipes! I'm determined to try some of them this week.
It was hard to LC at my sister's place, although she did have tons of eggs and bacon at her place. Worst bacon, ever! So salty, I tried rinsing the slices under running water first! Didn't really work, I'm sorry to say.

My new 3 ingredient recipe... quick, easy and delicious... anyways.
2 lbs ground beef 1/2 cup heavy cream Low Sugar Ketchup (to taste) Okay, 4 ingredients, you need 2 eggs. Mix it all up with your favorite spices, cook in oven at 300 for 60 minutes. Delicious meatloaf. I never knew adding cream to beef would be soooo delicious!

Last night I made the Sausage & Cauliflower recipe from Dana C's book, omitting the smoked Gouda because I didn't have any. Instead, I just sprinkled on some grated 4-cheese blend.
That recipe is just 1/2 lb sausage meat, browned and crumbled, a head or a 1-lb bag of cauliflower, cooked soft and mashed, and one brick (8 oz) of cream cheese, softened. You mix it all together, throw it in a dish and either bake it at 350 for about 30 mins, or nuke it for 5. Absolutely wonderful! Technically it's 4 ingredients, but it was so easy, I didn't care!

Mintyshake, I made your Miracle Cookies and they are scrumptious! Thanks!
I have also made the Oriental Turkey recipe (ground turkey, bag of broccoli slaw, soy sauce to taste) and it was fabulous. I ate the leftovers for 2 days. Tomorrow, I'm putting some pork chops in the Crock Pot and I'll be using one of the quick recipes off this thread.

Jake and all, once when I was pregnant and REALLY suffering with morning (read: all-day) sickness, and ex-H was out of town, I fixed Jiffy Pop and Raisin Bran for the other 2 kids and me to eat. Just couldn't face fixing real food.
Wine2, those PB cookies are great, aren't they? I did make them rather small, about the size of a 50c piece.

When you say Red Pepper, do you mean like a red bell pepper?
(I've always wondered what red pepper is...) It sounds *really* good. I'll be giving it a try. ![]() And BTW - Thanks for the ideas in this thread. Came in really handy when Hurricane Ike came through, knocked out our power and all we had was a generator (no oven, no stove). I was able to cook in a crockpot my "Hurricane Specials" which all were really good. ![]()

Somehow today, I woke up with a hankering for Chislic:
Ingredients: Cubed red meat (stew meat, or round steak or whatevah) Salt Pepper (Lawry's, alternatively) Deep fry the cubed meat, season the heck out of it, and serve. I've never seen it before I came to the midwest, but it's goooooood and makes for a quick lunch. ![]() (ignore the crackers in the pic! ![]() |
