I started a new server yesterday....and am SO PLEASED with her !!! Good thing we had the extra help...it's been 3 weeks since we served hot beef for lunch (because holidays) and I think the "hot beef siren" was going off !!!!

Feeling kind of "bound up" today....I know, TMI...

Heading in to do books, errands, etc.

Maybe come home and ride my bike for another 30 min. That's about how long it will take to finish the book i'm reading

today is my FREE day.....we are heading out of town for dinner. I just counted...and I think in the 11 weeks that I have been on plan, we have eaten out 1 time. at least that is all we can remember. Ruby Tuesday in Council Bluffs. Every other sunday, there is just something that I have wanted to cook.

Going up to Yankton today....just a road trip to get out of town. Will probably go to the Bonanza up there. We really like that place. ALWAYS CLEAN...and great service !!! we really do not eat out much, especially at home. I guess when you own a "mom & pop" place, you do not spend at corporate competition. that is just how we roll.....

anyway.....looking forward to a relaxing day....and hope everyone else has a good one too!!!!

This morning brings week #11 to a close. Week #12 will be a sling shot week. HC every day this week.

Lost 5.4 pounds this week. I knew it would be good, because I believe last weeks gain was just sodium issues.

Total for 11 weeks is 31.8 pounds.

Had a great meal yesterday. Stayed with a 5 oz steak smothered in mushrooms and onions and really enjoyed the salad bar. Stuck mostly with the lettuce and blue cheese dressing, but single bites of some pasta salads that were YUMMY !!! Baked potato/butter/sour cream...slice of thin texas toast. Even had a small chocolate soft serve w/choc syrup for desert. Enjoyed EVERY bite !!!

got to go fix breakfast now....go in early...apt. with security tech this morning and must be ready.

This thread looks interesting. I lost most of my wt. with carb-rotating. Am presently doing Carb Nite Solution which is sort of a rotation, for a bit of a tune-up.

Hi! I think I'm pretty much the only one here. ..lol. But, there are a few that stop in and check on me. I THINK that Julie is doing the same plan that you are. I try to post every day. ...that helps to keep me on plan and motivated.

Its not cold enough here! We actually had freezing rain so bad this morning! I thought I wouldn't be able to go to work. It came down & froze on the windshield in like 2 inch drops, making an icy cloud on the windshield. Couldn't see through it at all. But once the defroster warmed up it was OK. As I went down the hill it changed to regular rain. Glad it will stay below freezing tomorrow.

Idk....snow, ice....I'm so afraid of falling...wish it spring at least. Then in the summer when its so hot i'll be singing a different tune. LOL

just finished my egg nog protein breakfast.
I'm taking some capp. protein mix to work with me for my 10:00 feeding ....and a pear.

For the 1:00 feeding, chicken, sweet potato and butternut squash and "something" else. I bought some FF French dressing. It is listed under the flavoring section of the plan. At work, 1 of my cooks nuked some red ranch (French) dressing and we discovered that it was EXACTLY like a sweet & sour sauce. I think I will give this a nuke & see how it is.

4:00 will probably be either fish or chicken. I usually stick with chicken, seems to be "so much more" on the plate.

7:00 will be yogurt, as usual. Maybe tonight I will have it with strawberries.

this morning on the scale, I entered into a new 10# range. even tried on a pair of jeans from the "closet"...lol. won't be long....and I'll be shopping in my own closet again

Thanks Debby !!

Heading in early to cook the beef for hot beef sandwich for lunch at the bar. pressure cooked 4 hens yesterdays....and need to turn all that into soup also. Will be a rather busy morning!

Going to take some extra protein powders to work, for meals when nothing else sounds good. better bring some fruit also.

I have a "spot" on my knee that is ....SORE...!!! probably going to have to go to doctor for antibiotics. UUUGGGHHH !!!! I have a mark around the redness....hopefully it doesn't get bigger.

My dh and I own a Bar & Grill....for about 17 years now. Pretty big sports complex actually. Would give my right arm to be able to retire!

Just finished the morning protein smoothie...posted the bar specials...ready to face the day.

I packed things fro every meal in case I am at the bar late.

Kiwi and a capp. protein smoothie for 10:00 feeding

Sweet potato w/butternut squash, chicken, and ff Italian dressing for a salad for the 1:00 feeding

Probably the same thing at 4:00 (its just easy)

Yogurt and kasha for 7:00

I have been wanting pizza this week....so I'm thinking that is going to happen on sunday. I used to make that all cheese pizza crust in the sticky on the reipee section. I think it was Nancy(?) that was the op. DH loves that crust.

sausage, mushroom green olives on my half please.

Thin & Crispy Pizza Crust! Easiest EVER! Pics included!

I decided to experiment today.

I've been housebound since an unfortunate allergic reaction to some shea butter moisturizer. (caveat~if you are allergic to tree nuts, DO NOT slather shea butter all over your face, neck and body to combat dry skin).

Anyway, I don't know if it was the copious amounts of allergy meds I've taken, or the obsession I have with Cleo's recipes, but I had a weird dream about making pizza crust that didn't involve cauliflower, zucchini, shirtake noodles or broccoli.

I woke up with this crazy idea and I'll be darned if it didn't work! I still love the veggie pizza crusts, but this was delicious and easy for a change.


Thin and Crispy Pizza Crust
Heat oven to 450 degrees
In a bowl thoroughly combine
3 eggs
3 cups shredded mozzarella cheese
1 tsp garlic powder
1 tsp basil
press evenly into Pam sprayed pizza pan or cookie sheet
(this makes one 16 inch pizza crust)
Bake at 450 degrees until golden brown (about 10 to 15 minutes)

Here is what your crust looks like after baking




It will completely lift off your cookie sheet. I patted the grease off of it, but that step is optional





add toppings of your choice

This one has the following toppings~

1/4 cup low carb marinara
1 cup Mozzarella cheese
2 links Italian sausage (browned and crumbled)
1/4 cup sliced back olives

After adding toppings, run the pizza under the broiler until cheese is melted and toppings are bubbly






This slices up beautifully and the crust is crispy and thin




Yes, you can hold it in your hand!



This was super easy to make!

The veggie crusts are much healthier, I'm sure! However, this is a very quick and easy alternative, especially if you want a crisper crust!

I'm torn between this...which I have made numerous times...and the cauliflower crust, which takes MUCH les cheese, but I have NEVER made.

Debby - the post above I pasted from the sticky thread. It didn't take the pics with it though.... and as I said....I've made this many times....and we love it. But the cauliflower crust is tempting to try also. Less cheese/more veges.

Lost 2.4 pounds for the week
12 weeks done and a total of 34.2 pounds lost

So....LC day FINALLY....and I have my meals all planned out for the day. I have to get into the doctor at some point today....hope I can do that between feedings....

Just finished my egg nog protein smoothie....YUM...and will have to make a netrition order since I am on my last bottle of davinci egg nog!

WOW....that tilapia was delicious last night. will have to have that again!

Did a little experiment last night. Steamed some cauliflower and riced a bit of it. This is what I did....

1 c. cooked riced cauliflower (actually a bit mounded)
2 oz of ww grated blend cheese
1/4 c liquid egg whites
pizza seasoning
stirred all together and spooned into 4 circles on my muffin top/oopsie making pan
baked at 400 degrees for 10 min

4 firm little cakes !!! I think tomorrow....I will have these, since I can have the cheese tomorrow.
If I do NOT use any more cheese, I can eat all of them. If I add more ww cheese, I can have 2. I do NOT think I will evne consider the egg white/protein count since it is spread out over 4 "cakes". I will top with pizza sauce and thin sliced chicken

DEBBY....I was going to try this using cottage cheese....but discovered I was OUT....dang it !!

I bought some dry cottage cheese today, will see if I can use it. The sodium content is so much lower it shouldn't bother me salt-wise.

Today is a LC day.....and looking forward to my cauliflower pizza thingys!! I think I will put them on the grill at work, to crisp up the bottoms. Spoon some pizza sauce over the top and put some thin sliced chicken on them. If I can get to the store....I'll pick up some ground turkey and make some pizza/sausage flavored portions.

My knee is doing LOTS better....He put some shots in, lanced and squeezed and covered. Prescribed a pretty strong antibiotic to take. I guess if there is anything else wrong....these pills will take care of it!!!

Snowed here overnight. Not much, just enough to cover the sidewalks.

So, besides the "pizza thingys" today....an omelette sounds good. will probably have that for the 10:00 feeding. Pizza for the 1:00 feeding. AND....id I like that as much as I think I will....maybe the 4:00 feeding also....LOL

Ok...So....
the pizza thingy, I would, and did, make again. They got a "little wet" after being in the frig for 2 days... I knew they would be much better fresh out of the oven.
BUT....I still enjoyed them. And for the 4:00 feeding, I made them again. Although this time I microwaved it on parchment paper and slid it onto a hot pan to crisp up a bit. topped the 2nd one with chicken enchilada mix. Nect time....I want it straight out of the oven. Did the micro cuz I was just getting into the house at 4:00 and was starving.
