My Coconut Bark Isn't Sweet

I've been using sweetzfree to make my coconut oil bark. No matter how much I add, and how sweet the "batter" tastes, when it's chilled it has the very, very strong taste of bakers chocolate and is not sweet at all.

Any suggestions to make it, and keep it, sweet? TIA

sweetzfree will not sweeten chocolate no matter how much you put in. You have to use some kind of SA like Erythritol or xylitol . Good luck.

Hi DeeLen…
There are a lot of recipes for fridge candy. These suggestions are based on mine…

Thoughts:
  • I make my fridge candy with powdered cocoa not baker's chocolate
  • Erythritol (and a bit of spenda to fine tune it)
  • I add heavy cream to lighten the dark-chocolate edge and pull it back toward more normal chocolate (not milk chocolate but more like it)

My basic recipe ingredients are:
  • 2 cups Coconut oil barely melted (but melted)
  • 2/3 cup Heavy Cream or homemade full-fat yogurt
  • 2/3 cup cocoa powder
  • 1/2 cup Erythritol

Sometimes I cut this in half, but I find it easier to tweak in the full recipe sized batch. It's lasted as long as 2-3 months in the fridge.

The hand wand is used to blend this in our 4 cup glass measuring cup.

Because I'm using coconut oil and adding the cream/yogurt it sometimes wants to bind up or congeal (solidify) before everything is blended, so I just put it back in the micro for about 30 seconds to re-soften it.

A good rule of thumb: ALWAYS use more than one sweetener!!!!!!!!!

I use 3 or 4 of the following: Liquid Splenda (or 100% powdered sucralose), Xylitol, Erythritol, Stevia, Diabetisweet. Since I've been doing that, my sweets turn out sweet!

Yep, sucralose (in any form) + chocolate = bad relationship!

You can use it for PART of the sweetener, but I never use it for more than 25% of the equation, and that just for the synergy with at least one and preferably two other sweeteners.

I never knew! I'm been so in love with Sweetzfree all these years I thought it could be used in everything.
