Crock pot veggie recipes

Looking for tried and true crock pot recipes as sides for my Christmas dinner. Not just cheesy ones, but a variety. Any ones you love? Thanks!

Mushroom, Leek, and Artichoke Ragoût

*1 lb coarsely chopped mushrooms (may be any variety or a mix. Have made with all portabellas, all white, both mixed together, as well as mixed reconstituted shiitake, oyster, and porcini. All of them work!)
*2 large or 3 small leeks, white part only, julienned
*5-6 cloves garlic, finely minced
*1 shallot, finely minced
*1/4 cup finely diced onion
*1/2 cup chicken or beef stock
*1 tsp smoked paprika
*1/2 tsp thyme
*1/2 tsp chopped fresh rosemary leaves
*1/4 tsp herbes de Provence (optional, but gives a lovely flavor)

Combine all in the crockpot, cover, and cook on low for 5 hours.

Uncover and stir in to combine completely:
*1 tsp Worcestershire sauce
*1 tsp balsamic vinegar
*1 tsp dark soy sauce
*one 14 ounce jar artichoke hearts (not marinated!) You can feel free to cut them in half if you want smaller pieces.

Cover and cook another 30-45 minutes.

Uncover, stir well, then blend in *2 Tb sour cream or crème frâiche.

Taste for salt and pepper, and serve.

If the dish gets done early, it can be held on your warm setting, but do NOT add the sour cream until right before serving time, in order to avoid curdling. The last thing you add should always be the sour cream, and always off the heat.

Sprinkle with a dusting of parsley for color just before serving. For the festive Christmas table, you can also garnish with a few cherry or grape tomatoes, cut in half, placed around the perimeter of the bowl, cut side down. Follow with the dusting of parsley. Elegant and rich in flavor, but relatively low in fat and calories, and relatively low in carbs.

If you want a less smoky flavor, feel free to cut the smoked paprika in half. Or eliminate it altogether if you don't care to have any smokiness. If you opt to do that, add 1/2 tsp marjoram in its place.

Also makes a superb main dish, served over low carb späetzle, rice or pasta, or simply on toasted low carb bread. If you sub out the chicken/beef stock with vegetable stock, excellent dish for vegetarians.
