Strawberry cream cheese muffins

I made these muffins today and they were to die for!

They are adapted from My Low Carb Recipes blog

Cream cheese filling:
4 oz. cream cheese
½ T xylitol
1 T erythritol
1 T Just Like Sugar
2 Tbl beaten egg
¼ tsp. Vanilla

Beat cream cheese and sweeteners until smooth. Add egg and vanilla and beat until mixed well. Set aside.

Cinnamon streusel:
2 T Carbalose
2 T Spelt flour
3 T almond flour
3 T Sukrin Gold
½ T xylitol
½ T erythritol
½ tsp. cinnamon
3 Tbl cold butter, cut into chunks

Pulse dry ingredients together in food processor until combined. Add butter and pulse until small pea size. Set aside.

12 medium strawberries cut into small chunks.

2 C Almond flour
3 T erythritol
2 T xylitol
2 T Just Like Sugar
Pinch stevia powder
3 tsp. baking powder
1/2 tsp salt
2 eggs, beaten - less 2 Tbl beaten egg to be used in the cream filling
1/4 C coconut oil
1/2 C cream
1/2 tsp. vanilla

Whisk dry ingredients together until mixed. Add eggs, oil, cream, and vanilla. Stir together until combined. Do not over mix.

Preheat the oven to 350 degrees. Layer the ingredients into the muffins cups. This will make about 12 muffins. First add about a tablespoon dollop of batter. Next put about a teaspoon of cream cheese filling. Then top with a few strawberry chunks and a bit of streusel. Repeat one more time and pop in the oven for 20-25 minutes.

I like mixing my flours and sweeteners, but you can certainly use whatever you like.
