I only just started this LC journey this week, so I don't have any yummy meals yet. (Induction doesn't leave much room for creativity LOL)

BUT, I'm looking forward to seeing the replies to this thread so that I can get ideas for future meals. =)

Chicken wings, celery and ranch sounds SO good right now!

Hamburger/cheeseburger bowl. Everything but the bun, in a bowl, with a spoon to get the last juices at the bottom. Sometimes as simple as meat, cheese, and a bit of mustard. Other times with lettuce, tomato, pickle; sauerkraut a few times. Mayo only if we made it.

Chili. Or a marinara type meat sauce, spaghetti squash optional. Sauce, mozzarella, and pizza toppings. (At one pizza store I worked at when far younger than now I would get garlic butter instead of red sauce, feta cheese, smoked oysters, popcorn shrimp, crab, and/or lobster [protein configuration varied]. Leftovers were never stolen by roommates.)

I usually prefer to not eat the same thing for extended periods. Picking one favorite would be difficult. I used to cook by buying protein and giving it to a friend in exchange for something made with it.

Linda Sue's lasagna is our new fave (subbing deli turkey for the pasta—it works!)

I make a lot of dishes with cabbage, fried or alfredo. We love creamed cabbage with hot links.

One of my fave snacks is cold roast chicken dipped in a little mayo.

Of course steaks, roast veggies, salads, stir fries, deviled eggs, rich dips with crudités, soups (Hungarian mushroom lately), roasted salmon, etc. I live in the pacific northwest and we have a thousand ways to make seafood!

For something fun I sometimes make a version of "potsticker" balls, made of cabbage, meat, and spices. The kids like to dip them in different sauces.

Another fun family meal is an asian hotpot. You can buy these or use an electric skillet. Lots of recipes for the broth online, and you give everyone a plate of things to cook in the broth. It's fun for family and guests. It can completely lc, with meat, shrimp and veggies to dip and cook.

Italian seasoned meatballs with tomato sauce. Using the San Marzanos is worth the little extra in cost! Top with real parmigiano-reggiano.

Cheesecake Factory meatloaf clone from Top Secret Recipes made low carb friendly. Served with roasted veggies or sautéed green beans with garlic, or shallots, and bacon.

Baked Shrimp Scampi from Ina Garten, minus the Panko. Also love her beef tenderloin recipe, but that was a special Valentine meal using steaks. Man that was good! A great warm weather salad of hers is Snap Peas with Pancetta and Parmesan, it's like crack.

Roast chicken using the Zuni method. You get wonderfully crisp skin. Also spatchcocked turkey using a similar pre-salt method. Very economical when feeding a larger family and it cooks quickly...for a turkey.

I just love a burger salad. Simple and oh so tasty.

My favorite lunch is tuna with mayo, mustard, and avocado. The Italian brands or style taste much better and are in olive oil.
I love deviled eggs but usually just slice them in half and put a dollop of home made mayo on top with salt and pepper (or seasoned salt).

Spinach sausage lasagna. I layer oodles of spinach in lieu of noodles. Breakfast sausage instead of hamburger. Tons of mozzarella and ricotta. Not low cal by any means, but a great low carb treat. And is great for breakfast, lunch, and dinner leftovers.

Thanks everyone! I am starting back AGAIN tomorrow and today is my cooking day. On the agenda is:

Sausage/egg/cheese muffins for a quick breakfast
Linda Sue's White Castle Pie
Hamburgers
Salads (in ready to eat bowls)
Parmesan chicken (although I think I will cook those the night that I am having it so they stay crispy)
Cream of cauliflower soup
Coleslaw
Maybe mashed cheesy cauliflower

I want to find that Shrimp Scampi recipe. Anyone have it handy?

Any other ideas... throw them my way... I still have a bit more ground beef but don't want taco salad...

Chocolate cake in a mug:
1 egg
2 TB coconut oil (or butter)
3 TB cocoa powder
1 TB cream or sf syrup
1/2 tsp baking powder

I like to add a packet of sweetener cause I still like sweet things :blush:
Spray mug with non stick spray, nuke 1min to 1:15

Let cool. Good with hwc, or cream cheese, or more sf syrup and butter..
I have been experimenting, seems like every day I eat one of these I lose weight the next day. Sure it's just a fluke, but a yummy one!
I've experimented added a tsp of almond flour, etc. It's always good. lol

I love cream cheese whipped with some sf hazelnut (at $tree even) or caramel syrup (bought it at starbucks) and a some cocoa powder.
can do the same with hwc. basic, filling, & quick.

I almost never use recipes.

I keep my food very simple. Eggs. Meat. Chicken. Salmon. No dairy. This is what works best for me.

No desserts. Occasionally, I make some version of the Jorge Cruise Skinny Muffin.
