Made my first chayote dish tonight.
Peeled and diced 1 chayote.
I had pan grilled a steak in bacon grease and cooked the chayote pieces in the pan after removing the steak. Added salt, pepper, and parsley. Cooked it for about 10 minutes on medium heat.

I liked it.
Is it just like potatoes? NO.
It's a little sweeter and doesn't have the starchy quality, but it makes a good veggie side dish. Mild flavor and good texture.

Always hated them growing up. Maybe I should revisit them. My mom just boiled them or put them in soup. Definitely would not like it like that.

Anybody know if you could use these as potatoes in a stew? I want to do a stew this week in the slow cooker.

Also celery root or rutabaga.

For a quick LC soup:

Simmer peeled, diced chayote in salted water or broth (just enough to cover) until tender. Pour into bowl and add a generous amount of heavy cream & black pepper.

I often add either onion powder and a chunk of butter, or onions sauteed in butter.

It's so simple, yet so delicious!!!

This is a variation on a Costa Rican comfort food--it usually has potatoes & noodles in it, but even without them it is still good.

I'm in the process of making LC Banana Pudding using chayote for the bananas. I've got all the elements ready and will put it all together tomorrow so we'll see.

The chayote tastes like bananas but the color is off and the texture is still a little firmer than bananas so I told my husband he'll have to eat it blindfolded...he was okay with that, he loves banana pudding, LOL.

I use them for apples in "apple crisp".

Cut into small pieces and cook with some lemon juice and sweetener to taste. Add cinnamon and simmer until they are tender and most of the juice has evaporated. Then put them in a baking dish and top with favorite "crisp" topping (there are lots of recipes for toppings here on the boards) and bake until topping is brown and crunchy. Neither DH nor I can tell that these are not apples.

BTW, I do not use any apple flavoring, don't think they need it at all.

i intend to try chayote as soon as i retire (37 days)

they seem to have everything going for them. they DO tend to bay at the moon, though. My neighbors may not like that. Love & Profits: FLATFERENGHI

They have a no carb apple cider drink mix in Dollar Tree. It is the ones you put in water. no carbs, calories etc
