Stats: Low carb for blood sugar control
cinnamon toast muffin

This is a favorite breakfast bread. I get five muffins, ten toast slices per recipe.

Cinnamon toast quick bread

2/3 cup Carbquik
1/4 cup almond meal
1/4 cup flax meal
1 tbsp cinnamon
2 tbsp chia seed
1/4 cup chopped nuts
2 tbsp Wheat Protein Isolate 5000
1/2 tsp baking soda
1/2 tsp baking powder
2 eggs
1 tbsp water
1 tbsp cream
1/4 cup Torani or DaVinci caramel syrup
1/4 cup sour cream
3 tbsp oil
1 tsp vanilla
2 squirts liquid Splenda

Mix all together and cook in corningware 4” square dishes 2 minutes in the microwave per dish. Turn out on a rack immediately. Slice in half and toast. About 2 grams carb per muffin, 1 gram per slice.

Sharon, do you crush the chia seed first, or make it into a gel before adding to the recipe?
