Southwest Crackslaw???? Other variations??

So, last night I tried the famous crackslaw. LOVED IT!!!!!!!!!!!!!!!

Can tell this will be a major staple for me. Saw someone mentioned a southwest version and can't find it. Anyone know of this? Also, have you tried and loved any different variation of the original? Would love different ideas that have been a success!!

I would take the basic recipe and just add taco seasonings and tomatoes to it and maybe some cheese.
