I haven't been boiling mine. I just add them to a hot pan with bacon fat or butter or oil of some sort and quickly cook them, tossing them around for a couple of minutes. Then I usually create a sauce of some sort in the pan with them, like HWC and cheeses, etc., (or pull them out, create a sauce and put them back in). I find I like the bite a lot better. Boiling them in anything makes them just a bit too soft.

I simmered it for about 4 minutes. I wonder if it's because I'm not using coconut flour but a combo of lupin flour and/or pea protein isolate?
Next batch I'll just put it straight onto a plate with sauce already in it and see how that works. |

Soobee, can't wait to hear about your experiment today!
My oat fiber is going to be here tomorrow (but probably not til around 7 pm, that's when the UPS guy shows up here) so will experiment on Thursday or Friday. With the old-style KA plates that fit my meat grinder, I'd like to be sure it will extrude easily!

I am cooking them less too- about 2 minutes in boiling water, not broth. Then I sprinkle a little chicken bouillon powder in with the pat of butter I use to keep them from clumping.
Makes total sense to lower (or even eliminate?) the baking powder if you aren't cooking them. Probably going to make hamburger stroganoff today... hamburger patties chopped up, gravy (1/2 cup Schwan's brown gravy is 5 carbs), mushrooms, onion & garlic powder, sour cream, maybe some beef broth and guar gum to thicken if I need more sauce, buttered pasta. I'm going to try 1 3/4 cups water this time.

I'm a little worried about gastric distress as well. I do fine with oatfiber, but glucomannan and I have issues --doesn't mean I'm not gonna try it!

Charski, the newest recipe (2 cups water, 1 1/2 tsp baking powder) fed through much more easily. All 12 holes of the spaghetti press worked without me having to unclump them. The pasta, when not parboiled but just nuked with sauce, has the texture of al dente pasta or maybe baked pasta. It would still have to be parboiled to get a softer chew. I am going to ncrease the water to 2 1/4 cups next time, but that won't be for a few days.

I'm wondering... is adding more water to the dough making the pasta even more soft? I can't believe I'm talking about "too soft" in conjuction with glucomannan "miracle" type noodles.

I made a 1/2 batch this morning to try out my new toy. After I mixed it up I immediately put it into the hopper of the grinder. It made beautiful pasta!! I had a little for lunch and all I did was heat some EVOO with some fresh garlic and Italian seasoning and poured it over the uncooked pasta and added some fresh parmesan. It wasn't hot enough so I nuked it for 30 seconds and it was fabulous!!!

I think the microwave is great tool to "cook" our pasta. It does firm it up a bit, which I like, and warms it at the same time. I did cover mine with Saran..

Buttoni, this little toy is so cheap you don't even need to wait until Santa comes again. Don't wait, it's great!! And I've never made pasta in my whole life until this recipe! Not counting homemade noodles for chicken and noodles. I never thought of that as pasta though, lol.

booo.. I am at work and my Norpro came just as I was leaving for work.. I hope it is not broke and the post man just threw the box out of his truck into my driveway and drove off. I tried to chase him,, what a jerk!!! That pasta looks great!! I want some clam pasta soooo bad..

This is the recipe I used. It's Carolyn's that she posted, but I cut it in half but still used a whole egg. That's a perfect amount for 2 of us for a meal. Although I guess according to this 1/2 should feed 4. Well, around here it feeds 2, lol.
From CarolynF: Serves 8 1 lg egg 1 Tbs. oil 6 T glucomannan powder 6 T oat fiber 1 T baking powder 1/2 t kosher salt 2 t coconut flour 1 1/2 cups water Mix the egg with the oil in a medium bowl until smooth. Mix all the dry ingredients with a fork together in a cereal bowl. I just added it slowly the egg/oil mixture until it was mostly incorporated. Then I poured the 1 1/2 cups of water in the bowl and whisked it all together until smooth. I covered the bowl with a towel and let it sit for the 8 minutes.

very very happy with this recipe--I was worried about my reaction to that much gluc powder, but this was awesome! I used my Norpro to make rigatoni and topped with a nice marinara. So easy and so good. I boiled the noodles for one minute.

Ow my!! This is awesome! And even better: my KA pasta attachment came today! I'm so excited, can't hardly wait!!
But..... I'm a little confused while reading this thread .... Can I use the original recipe from CarolynF of do I need to increase the water for my KA attachment?? |

Sjanette, the original recipe works with the KA attachment, particularly the rigatoni. I thought the spaghetti worked better with more water, but it did work with the original recipe, although I had to unplug the presser a few times.

I've eaten this 4 different times and had no tummy issues at all. My DH hasn't either.
I don't know about adding more water. My spaghetti worked perfectly in the Norpro and it wasn't hard to turn the crank at all either. I think it might be a pretty forgiving recipe judging my everybody's tweaks and successes.
