Last (for now)...

This is how I made my hubby's lunch today.

First- Mozzerella stackers, each stacker is 1/2 ounce sliced mozzerella, mayo, tomatoe slice and 1/2 slice bacon, I put for of these in his lunch (he works long hours)

Second- Today's message spoon for his Jello. It say's "Thank you for all you do! I love you!" There is a spoon with each lunch and I put different sayings each day.

Third- His "fancy lunch" as he puts it. One BBQ pork chop, 4 mozzerella stackers, 2 ribs of celery sticks, 1 oz. creamy ceasar, one jello and one message spoon.

By the way I get his "fancy lunch" containers at Costco, each chicken ceasar salad you buy in there food court comes in one! They are heavy duty and can be used over and over again, just like tupperware.

Meatballs in Creamy Cashew Nut Sauce
From the book Curry Bible, by Mridula Baljekar

Serves 4

Generous 1 cup raw cashews
2/3 cup boiling water
1 lb ground lamb (I used ground beef)
1 tbsp thick yogurt
1 lg egg, beaten
1/2 tsp ground cardamom
1/2 tsp ground nutmeg
1/2 tsp pepper
1/2 tsp dried mint
1/2 tsp salt, or to taste
1 1/4 cups water
1 inch piece of cinnamon stick
5 green cardamom pods
5 whole cloves
2 bay leaves
3 tbsp oil
1 onion, finely chopped
2 tsp garlic paste
1 tsp ground ginger (I used fresh, and increased the amount)
1 tsp ground fennel seeds
1/2 tsp ground turmeric
1/2 to 1 tsp chili powder (Indian chili powder is more like cayenne pepper)
2/3 cup heavy cream
1 tbsp crushed pistachios to garnish (I left this off)
Chopped fresh cilantro to garnish

Soak the cashew in the boiling water for 20 minutes

Put the lamb into a bowl and add the yogurt, egg, cardamom, nutmeg, pepper, mint, and salt. Knead the meat until it is smooth and velvety. Alternatively, put the ingredients in a food processor and process until fine. Chill the mixture for 30-40 minutes, then divide it into quarters. Make five balls (koftas) out of each quarter and compress so that they are firm, rolling them between your palms to make them smooth and neat.

Bring the cold water to a boil in a large shallow saucepan and add all the whole spices and the bay leaves. Arrange the meatballs in a single layer in the spiced liquid, reduce the heat to medium, cover the pan, and cook for 12-15 minutes.

Remove the meatballs, cover, and keep hot. Strain the spiced stock and set aside.

Wipe out the pan and add the oil. Place over medium heat and add the onion and garlic paste. Cook until the mixture begins to brown and add the ginger, fennel, turmeric, and chili powder. Stir-fry for 2-3 minutes, then add the strained stock and meatballs. Bring to a boil, reduce the heat to low, cover, and simmer for 10-12 minutes.

Meanwhile, process the cashews to a paste in a blender and add to the meatball mixture along with the cream. Simmer for an additional 4-6 minutes, then remove from heat. Garnish with crushed pistachios and chopped cilantro.

Notes:

*I used 1/2 of a sweet onion (since it was very big), and several cloves of garlic, and a big hunk of fresh ginger, and processed it to chunky smooth in a food processor. It is always good to avoid big onion chunks if you want your kids to eat it, lol, and it is an easy way to chop the fresh garlic and ginger.

*I had some homemade cashew nut butter that needed to be used, so instead of making it specifically for this recipe, I just used 1/2 cup of the nut butter that I already had.

*About the chili powder: the chili powder that is used in Indian cooking is more like cayenne pepper, and not much like the typical American chili powder that we use when we make chili. I have some chipotle chili powder that I really like, and that is what I used. It is rather spicy and has a nice smoky flavor to it, since it is made from smoked jalapeños.

*I served it with cucumber raita. I was in a hurry so I didn't do a fancy recipe. I just grated some cucumber, added it to some yogurt, squeezed in the juice from 1/2 a lemon, and added salt and pepper. If you look around online, there are lots of raita recipes. You can add tomatoes, onion, garlic, other spices, cilantro, and all sorts of stuff.

butter a pie pan, and preheat the oven to 350. Wisk the eggs and cream. Grate enough cheese to fill the pie pan. Sprinkle the bacon over. Pour the cream and egg mixture evenly over the bacon and cheese. Bake until set.

Ok, cleo, I'm looking at your blog post about making these, and on your nutrition info, it says 395 calories for just the "tots". This seems off to me. I added up all the calories in the macronutrient breakdown, and came up with just over 100.

In any case, I'm headed to the store, and making these tonight!

Cleo...is the nutritional info for the tots with chili and cheese. 395 calories does seem high for just a serving of cauli and parm cheese.

Well, there was no frozen cauli at the store, so I'll have to make the cauli tots another time!

Instead, I made creamy meatballs with zucchini strips.


I tweaked a recipe from Linda Sue's site.

CREAMY MEATBALLS
Meatballs:
1 pound ground chuck or leaner ground beef
1/4 cup parmesan cheese, grated
2 small eggs or one large (I have chickens, and thus smaller eggs, lol)
1/4 teaspoon salt
1/8 teaspoon pepper

Sauce:
4 ounces cream cheese, softened
6 tbsp heavy cream
1/2 onion and several cloves garlic, processed until chunky smooth
fresh ground pepper to taste
Pinch nutmeg
Sea salt, to taste
Water, as needed to thin the sauce
1/4 cup freshly grated Parmesan cheese, approximately (didn't measure)
Additional Parmesan and nutmeg to garnish

Mix all of the meatball ingredients in a large bowl using your hands. Squeeze the mixture together to blend well until it's no longer slimy from the eggs. Roll into meatballs. Fry in bacon grease/butter/oil (whatever you want, lol) for about 10 minutes, turning halfway through. I used a heavy cast iron skillet and shook it vigorously every once in a while, and that turned the meatballs. Remove meatballs from pan.

In the same frying pan, sauté onion/garlic mixture in the frying pan until tender. Add the cream cheese and let it melt over low heat, whisking until smooth and creamy. Gradually whisk in the cream, blending well. Whisk in the seasonings. Add about 1/2 cup water and whisk in well. Adjust the seasoning, if necessary. Add the meatballs to the sauce. Cover and simmer on very low heat about 10-20 minutes until heated through and bubbly (add water as needed). Stir occasionally to prevent the sauce from sticking to the bottom of the pan. Stir in the Parmesan just before serving.

Garnish with additional Parmesan and nutmeg.

Using a mandolin, cut the zucchini into long strips. Sprinkle the strips with salt and let sit for 15 to 20 minutes.

Heat a heavy cast iron skillet. Melt butter in the skillet, and then add enough strips to fill the pan with a single layer of zucchini. When lightly browned, turn the zucchini and cook other side until browned.

Working in batches, continue cooking the remaining zucchini.

Dinner tonight was a coney dog with chili and cheese sauce, sauerkraut, dill pickle relish, chopped onion and cauliflower salad. It was great, and a perfect way to use up some of the chili and cheese sauce left over from the tots at lunch. It looks better when the picture is bigger. It was so good!

The pico de gallo and the taco seasoning really pushed it over the edge and zipped it up! I scored the pico de gallo at King Soopers in the refrigerated aisle next to the dips for only $1.99 for the tub. It was a great deal. My favorite Taco Seasoning is Old El Paso.

Less of me---That is so awesome to send 'notes' for your hubby! I'm sure they are much appreciated. Love the pics....I sometimes get my containers from Costco too! Otherwise if I want some smaller for side salads, Smart and Final is a winner for the containers....I do have a question for you though....the container for you creamy caesar??? where did you find? and do you make your own caesar?? haven't been able to find a really good one...although I do LOVE the one from El Pollo Loco (creamy cilantro caesar)

Actually, the dressing container is a 2oz. formula baby bottle w/ lid no nipple! It works perfectly for portioning. And we use Ken's Creamy Ceasar...yum.
