Last night I made a nut burger, squash patties, small wholly avocado tin with a few santitos & a cucumber.
For dessert, I had a yellow apple and half a pear.
I was still hungry later, so I had some orange sherbet.

I am debating on dinner tonight.
I'm thinking either a pasta dish with carb nada fettucine pasta (love this stuff) - or homemade vegetable soup with hominy in it - or homemade pizza on the bbq or even a frozen Daiya pizza - or a boca burger and some broccoli tots.
Today, the possibilites seem endless...
We got a cold front in, so its one of those dreary london looking days and nothing appeals to me much today.

I had broccoli quiche for breakfast that I had put in the freezer the last time I made it. I try to use up a frozen food of some sort at least every other day cuz the freezer is packed. It doesn't help that I find new frozen products to add. So I've declared not to buy anything else frozen unless I absolutely need it (like my boca burgers), so I can use up all this other stuff that gets buried and forgotten about.
I promised my wife I would have the freezer empty by Christmas. Considering it is an 18 cu. ft. freezer, that doesn't seem likely, but I'm going to give it my best shot.
I don't know the problem cuz I really like having something I can pull out of the freezer and just nuke on tired nights...but at times, I am too tired to deal with the freezer.
And cleaning out a freezer is not a fun job for me.

What is everyone else having?

It turned cold here, so I made myself some chili and added in some tvp I found today. Topped it with some Daiya cheese shreds that I need to use up. Yum! If I had more time I would have made some grain free corn muffins to go with. Maybe tomorrow!

Yum...chili.

I have never made chili with tvp...I should do that.

Years ago, someone posted a great recipe for faux hamburger meat using tvp. I even made it a few times. It was great. You couldn't use it like raw hamburger but it was great for cooked hamburger recipes. I loved that stuff.

Then....my hard drive crashed and killed my external hard drive with all my recipes stored on both the pc and the external as a back up. There was no saving either one of them.

So, try as I might, and I searched and searched but could not find that recipe on here or via google. Her name was sister something, but she's been long gone from here for years too.

I sure do miss that recipe.

I got off track a little...lol

For dinner, I'm having corn dogs (vegetarian type from TJ's).
And some salad, not sure what I'm putting in the salad yet.

It's been a drizzling, dreary weekend, so I'm doing catch up and honey do stuff inside. I have some shelves to build tomorrow and figure out why my pc is acting up. I think its my browser. PITA

I made a pot of Fakes (fah-kess) which is a simple Greek lentil soup. That's what I'm having with some avo/tomato/cuke.

Yes. IP everything but salt. I soaked the lentils (I am a soaker) so it only took 10 min with natural release.

I used the olivetomato recipe which is super simple.

I garnished with some avocado and chopped tomato but it's good just plain.

Last night I had a boca burger, canned green beans, & a baked potato.

I shouldn't have had the baked potato due to the potassium, but I gotta cheat sometimes. lol

I think tonight I'll make some of those TVP crumbles and some carb nada pasta and I have some butternut spirals I purchased that I'm going to try. I probably won't like them, but I have to try different things. (my wife loves winter squash, so they won't go to waste.)

I have some broccoli to cook up as well.

Orange cranberrry mufffins are sounding good to me today. It's another one of those dreary days here. It drizzled all weekend. This kind of weather makes me want baked goods, which I don't need. At least most of them are low potassium.

Spaghetti night here I still have some edamame past for me and the hub will have the regular stuff.

I'm enjoying some baked stuff and am going to whip up some chocolate sweet potato cupcakes.
Dreena Burton posted some cinnamon chocolate chip muffins that might make it into the oven.

For dinner, I'm thinking faux beef stroganoff, maybe. I should have a salad also, but I don't know what else. It seems like I only ever eat green beans these days.

I looked at lots of vegetarian entree recipes yesterday and while a lot of them looked great, they mostly had lots of ingredients and were very time consuming.

I'd really like some good food with not too many ingredients or too time consuming. I know that sounds vague, but I don't mean stuff like opening a can of beans or something like that. That's my go to on late night dinners.

I think I just need to hire a chef....lol...its nice to dream.

Nigel, I am a one pot meal kind of person. When I have to make decisions about main and sides I start to lose it.

That is why I love the Instant Pot.

I cooked up some Louisiana style pink beans and I'm whipping up some cornbread. Hubs will have some microwaved mac and cheese from TJ's.

I turned the last of those beans into soup for tonight.

I want to make an Ethiopian lentil stew tomorrow if I make to the store for the spices. I have a few but some I never use I'll need to pick up. The nearest HFS has a really nice bulk spice selection so I can buy only the amount I need.

About that Ethiopian stew....
I already knew that I don't like cinnamon and such in savory dishes but everyone raves about berbere spice so I found a recipe that was low in those spices.

Well the verdict is in: no amount of heat and herbs will hide that cinnamon/allspice/clove flavor unless it is a small amount.
The stew is not inedible but I may turn it into some soup with lots of vegies, tomato, oregano......

I love cinnamon and use it daily but not in savory.

I have some recipes that use allspice (Jamaican) but it 's not strong. It's mostly cinnamon that does it in for me.

When you don't eat dinner, do you feel tired the next day?

I do, so I started eating some fruit when I don't feel like dinner--it helps me not feel so tired the next day.

jem51, bummer about the spices. I feel the same way you do about using those particular spices in savory dishes. I'm not even fond of the cloves in baked goodies.

Nope, Nigel. Never tired if I don't eat dinner, just hungry when I wake up. lol! I haven't really been hungry the past few evenings. Yesterday I had a big lunch and then I did get a little hungry in the evening, but I didn't really feel like making anything and I wasn't that hungry, so I had a couple marshmallows. hahaha

jem- I'm the same way! I probably would have omitted it because even the idea does not appeal to me.

Jenn, I try all kinds of things that everyone raves about and I used a berbere recipe that had the tiniest amount.
This happened when I made mujadara, too.

But it was all good after I added curry powder and coconut milk.....if fact it was delicious both times.

Now I know for sure there is no way so never to be fooled again.

Probably having pizza tonight.
I have to go pick up some shelf thingy's...for the shelves I cut for some inside storage cabinets. I lost the ones I had when I was cleaning up. They just vanished.
