Fantastic Flour Mix Crepes

Hi everyone. You might remember me. I'm Barbo and have been MIA for
awhile. Just made crepes with this wonderful flour mix. Thought you might
all like the recipe. This baking mix is so wonderful with no Franken food tastes and no funny after taste.

Barbo's Diet Kitchen
Fantastic Flour Mix Crepes
In food processor place:
5 large eggs
2/3 c. HWC (heavy whipping cream)
1/2 c. of Fantastic flour mix
1/4 c. melted butter
1/4 c. Splenda or other granular sugar substitute
1/2 tsp. vanilla extract
Dash of salt
1/4-1/2 tsp. baking powder
Whirl until smooth. Let mix set up for 15 minutes
Butter/oil mix. Melt butter add some good oil and have it standing by.
Use 2 8" skillets. Heat them with 1/2 tsp. butter in each skillet
Pour 1/4 c. of batter into skillet and swirl until the bottom of the pan
is covered and the batter stops running. Let cook until you can carefully
loosen edges and flip them over into the second skillet. Cook for a few
minutes and then transfer to a paper plate. I used parchment paper
squares between each crepe. Continue until all crepes are done.

Barbo's Ricotta Filling
1 carton full *fat ricotta cheese into blender, add vanilla extract to taste.
dash of salt 1/2 to 1 tsp. vanilla and (I powder my sugar sub) and add it
to taste, give it about 1/4 c. HWC and process until smooth. Refrigerate
until very cold. Spread on crepe, roll and fry in butter. Sour cream topping
is nice. Sprinkle with cinnamon or nutmeg.Raspberry jam is very good too.
*I like Trader Joe's whole fat ricotta, it's never grainy.

Bechamel Sauce from Fantastic Flour Mix

Thanks you gals for the nice greeting. I've been under the weather most
of the year. Doing what I can to get along

I think of you all often. Char blessings on your new home. We are all
wishing and praying for the best of times for you all.
I kept up with Carolyn's wedding. Still think LC/Keto is best way to go.
Still need to lose more weight to get lighter for the sake of my legs.
I gained a little from the use of steroids this year.
Second batch of crepes came out good. No sugar and no vanilla Don't let the batter get toooo thin.
The ricotta filling was not as thick as usual because I used a different ricotta cheese.
Stick with the full fat brands that you are accustomed to.

The bechamel sauce tastes wonderful and thick. I made the second
batch without sugar or vanilla so that they would be like pasta wrappers

Bechamel Fantastic Flour Mix
1 3/4 c. HWC
1/3 c. water
1/4 c. melted butter
Dash of salt and pepper
1/3 c. flour mix
Mix HWC and water together. Set aside
Melt butter in sauce pan (non stick)
when melted and hot add the flour and stir stir stir.
Then add your cream and more stirring. Season and cook
until nice and thick. It's delish!

Beefy Mushroom Crepes
I just lay out the crepe, add my beef mixture and a little
sauce and roll. Lay out on greased baking sheet.
Just do that until about 8 crepes are filled and rolled.
Pour sauce over all and bake until bubbly about 350.

Your filling is up to you. I just did hamburger with minced
onion and mushrooms.
Options: parsley, some folks love a dash of nutmeg in their bechamel.

Looks amazing. Quick question. In the flour mix is it egg white powder (dried egg whites) or egg white protein powder? Do you have a preference on the protein powder?
