Quick and easy recipes???

Ok I am trying to rebuild my recipe books.

My kids ruined most of my stuff by dumping a glass of milk into my book and hiding it because they didn't want me to be upset. (clearly that one didn't work, I have just been taking deep breaths and reminding myself they are little kids)

At any rate anyone willing to share some of thier favorite fast easy recipes for me? I tend to be the kind of person who won't spend more than 15 minutes prep time on anything.

I have both a LC and a non-LC book. I seem to have saved a couple of pages of lc appetizers, 1 page of non lowcarb casseroles and a page of non-lc desserts..... boy am I upset with how much I lost that recipe book was a present to me at my bridal shower. My mother went and got recipes from every woman in my life and made a pretty book out of them for me. Can't replace the book, can't even replace the recipes since several of those women are no longer with us. I will call my mom soon and ask her if she has copies but I doubt it

Walnut Chicken Salad


List of Ingredients


1 lb Chicken, light meat, meat only, cooked, fried

1/4 cup Nuts, walnuts, dried

1/4 cup Mayonnaise, Best Foods

1 tsp Salt, table

1/4 tsp Spices, pepper, black

1/4 cup Celery, raw



Instructions for Preparation


Starting with cooked chicken, that you've skinned, boned, and diced ahead of time, simply combine these ingriedients for a delicious chicken salad. This goes well with pork rinds or rolled up in large romaine lettuce leaves.

Ranch Style Poke Chops


List of Ingredients


3 lb Pork, center loin (chops), bone-in, lean & fat, raw

2 tbs Ranch Dressing Mix



Instructions for Preparation


This one's an easy breezy for sure- simply use the ranch dressing mix (there are various brands, so you may have to search out the one with the lowest carbs) and use it as a rub for the pork chops. Then bake the chops in a 400 degree oven for about 25 minutes, and POOF baby! Utterly delicious, and practically perfect in every way!

thank you! I neer thought of doing that with ranch dressing on chops. I may try that tommorow actually

I just finished up writting out what I still have. On the brighter side I saved my grandma's pumpkin pie and mountain pie recipes so I am pretty happy about that.

Dh came in and couldn't figure out why I was crying. Finally i said it was over a recipe book and then he started laughing at me

I know I don't know ya'll personally.. but i had the overwhelming need to say..... "I love you guys"

These are great threads and also sparking my memory as to what I was missing. i think I may be able to piece together MOST of my book.

I am still short some casserolles and good old fattening desserts etc but I will get there
