Thank you for your reply. I went ahead and made them in muffin papers. They turned out great. You are correct about needing a fork, which I like. Having them as muffin size makes it easier for me with portion control.

Just made a double batch of this. Forgot to double the sweetener but suspect it will be fine with half the sweetener. It is in the oven and smells great.
