I made these today, with a few slight changes (here's the link again Fluffy Coconut Flour Pancakes just in case)

4 eggs-- cold from fridge

2tsp vanilla extract (I make my own)
4 or 6 drops of liquid splenda concentrate
1/2c coconut flour
1tsp baking soda

butter for frying

I whipped the eggs but not for 2 min and I mixed the dry ingredients together, and then I actually added the dry to the wet, not the other way.

Came out fine

I made about 15 smallish pancakes, and DH and I ate ALL of them!

You could add more sweetener, I agree, or let them be sort of neutral and really do it up with the topping.

Best texture of any LC pancake I've had so far, and my coconut flour is about 3g total for about a 1/2c, so overall, this is a very low carb recipe!

didn't cause any cravings or anything weird.

I'll post a pic soon too

Make your own sugar free jam and the carbs come way down. I make a s/f cherry jam thats 1.6 gm.carbs for 1 Tablespoon. and blackberry that .8 gm.carbs per Tablespoon. I use Pamonas pectin for making s/f jam.

Just made the fluffy ones, had to add a little extra coconut flour, and I used unsweetened almond milk because I didn't have any coconut milk and I'm trying to avoid cows milk because I can't find any raw.

Made 11 pancakes for me with a 1/4 c measure, I shared 2 with the family to try and portioned the other 9 into 3 stacks. 1 for me today and 2 for the freezer for another morning. I do think next time I'll use less salt. Maybe 1/4 tsp instead of 1/2. I'm also thinking of trying a blend of almond and coconut fours one of these days to see what I can come up with. I like the almond flour pancakes, but these are def fluffier and have a better texture.

All in all very pleased with this recipe.

maple flavoring and a couple drops of stevia in a cream whipper with either a can of full fat first press coconut milk or just good old heavy whipping cream has been my family's favorite pancake topper for over a decade
