WOE: Healthy Low Carb
Yellow Squash noodles

I bought some of these in the produce section at Kroger already cut up but I am not sure how to cook them. I want to use them as pasta for steak alfreado... please help

Don't cook them very much or you'll wind up with a watery mess on your plate!

With zoodles (zucchini noodles) I put a pat of butter in a pan, get it good and melted, throw in the squash and toss it around for a minute or two, and that's all. Plate and put your goodies on top and enjoy. I'm sure the yellow squash noodles would work the same.

I treat the yellow squash the same way as I do zucchini. I usually lightly salt them, lay out on paper towels for awhile, than squeeze as much water out as possible. I usually quick sauté with mix of butter and olive oil plus seasonings. Just love them. Last night for the first time I mixed my zoodles with spaghetti squash strands, sautéed them and poured homemade alfredo sauce over them. This was so good!

We already have yellow squash coming out of our ears from our garden. I guess I will zoodle some. I wonder if the zoodles would freeze well??

They do if you blanch them first - otherwise they're a pretty watery mess when you defrost them.
