Fast and Easy Low-Carb cheese sauce

Makes 8 servings
Notes at bottom

4 tbsp(s), Butter - Salted
1 cup, Half & Half
4 oz, Cheddar shredded
2 oz., Parmesan Cheese shredded
0.50 Tbsp (10g), Tapioca / Yuca Starch (you'll need between 1 teaspoon and 1 tablespoon)
1 -2 oz(s), Water to dissolve tapioca starch
Salt and pepper to taste

Melt butter in a saucepan and add half and half.
Bring to a simmer and whisk in the cheeses and stir until melted OFF heat.
Add salt and pepper to taste.
Dissolve the tapioca starch in the water and whisk over low heat until thickened.
I added 1/2 and it was fine, but if you use almond milk it might take a whole tablespoon.

*Use arrowroot or your preferred thickener.
*you can try this using heavy cream, unsweetened almond milk or coconut milk. I have not experimented with those.
**Saute some diced jalapeno and onion (and tomatoes if you like) in the butter then continue recipe to get a passable queso dip ).

Sounds great. Do you add the starch to the sauce off heat?

I make a slurry with the starch in water, then whisk it in over heat and bring it to a simmer to cook the taste out.
Tapioca starch doesn't have a strong taste (like flour) so 30 seconds on simmer is enough to cook it out
