Start Date: Low carb living a few yrs now.. Restart Nov 2010
So I pickle brined my turkey. in the morning I injected with butter, seasoning, and bacon fat. I cooked half way, flipped the turkey cooked then hour before done topped with bacon lattice.. best turkey I ever cooked, it was amazing, the white meat was juicy like dark meat..

Yes, I took the back and neck (and some other chicken bones) plus carrots, celery and onion, and cooked them for 2 1/2 hours on Wednesday to make the gravy - so I didn't have to do it on thanksgiving.

But that bacon-covered turkey looks awesome, Queen!
