Creamy Breakfast Lasagne

I found this in a local cookbook..

One dozen eggs
8 ounces of sour cream
1 lb. pork sausage
8 ounces cream cheese, softened
1/2 cup chopped green or red or combo pepper
1/2 cup red onion
Shredded cheddar cheese
1 Tbs. butter
1/2 tsp. salt
1/2 tsp. pepper

Brown the sausage and set aside. Saute onions/peppers in butter until soft.
Add cream cheese and stir together until hot and easy to spread.

Whisk together eggs/sour cream/salt and pepper. In a Pammed 9 x 13 pan layer the cooked sausage, then the cream cheese/veggies, and then the cheddar cheese. Finally pour the eggs/sour cream mixture over all.

Cover with foil and bake for 45 minutes at 350.

The author, Cindy, works at a local library and the librarians love it when she brings this to work..

I make something similar:

Breakfast Casserole

6 eggs
1/4cup heavy cream
1/2 tsp. salt
1/2 tsp. black pepper
1lb pork sausage, cooked and crumbled (I've used hot, reg and sage flavors - all good!)
1 jalapeno pepper, diced (or small can green chiles)
1/2 to 1 cup shredded cheddar cheese
2 Tbs. minced garlic
1 tsp. cumin
4 slices low carb bread, optional

Mix the eggs, cream and salt and pepper. In another bowl put the sausage, jalapeno, cheese and spices.

Spray small casserole dish with non-stick spray, place the sausage mixture in the bottom and pour egg mixture over. Bake at 350 till eggs are cooked through.

The original recipe called for bread and I have made it with lc bread. If using the bread, start with egg on the bottom, top egg with a slice of bread, top bread with sausage mixture, repeat layers to use all egg, bread and sausage. I sprinkle a little more cheddar over the top layer. Bake at 350 about 20 mins..

Serves 4

This is a great recipe, thanks for sharing. Long ago I had a similar recipe that used chorizo instead of the sausage and may have had some salsa in it as well.Sliced roasted green chiles would be nice for the peppers.

You could probably put it together the night before, cover and refrigerate it and bake the next morning..Probably would need more time coming from the fridge, though.

I finally made this using red and green peppers instead of the red onion..It was amazing and the ladies went wild. I made 1/2 of it the night before, up to the cheese..Then in the a.m. I took it out of the fridge and added the eggs/sour cream. It took almost an hour to be done..

The cheese rose to the top, for sure..which was fine with me..

Yes, it is quite eggy, Tishy, but you could cut back on the eggs and add some heavy cream with the sour cream if you wanted a less eggy one.

When it's too eggy, drop some of the yolks and use
more whites, or liquid egg white. It really helps but keeps
the integrity of the recipe.

We've been making the one in post 4 in the thread below (from Locarbman) for years. I have some extended family that are literally disappointed if we have them over for brunch and I don't make this.

It is really, really good and similar to the recipe you listed. Just thought I'd mention it in case anyone wants to try it or tweak some combo of the two. The cream cheese combined with the sausage is sooooo good. eta: I don't like super eggy so I use 4-6 eggs.

We sometimes make it on a weekend and reheat during the week in the microwave.

DD made this and we loved it, will so make this again and again. She only used 9 eggs as I told her someone said it was a little eggy, and it was perfect.

I will try this with ham and bacon as I don't care for sausage, although Kolbassa would be good I guess.
