Southern pecan pie, low carb style



Southern Pecan Pie
3 large eggs
Artificial sweetener equal to 1 cup sugar (I used liquid sucralose and swerve)
1/2 cup sugar free maple syrup
1/2 cup sugar free honey
1 tsp vanilla
1/4 tsp salt
2 tbsp melted butter
1 1/2 cup pecan meats
1 Dixie Diner Press and Bake pie crust

Make pie crust according to package directions.

Beat eggs slightly; add sweetener and beat well. Add syrup, honey, vanilla, salt and melted butter. Stir in pecans and pour into pie crust.

Bake in preheated 350 degree oven for 45 minutes or until done.

Makes 8 servings, 2g carbs per serving.

I use any syrup that is splenda based, not aspartame based (allergic to aspartame). I use Honey Tree honey from Walmart.

I made a high carb pecan pie. What I liked was they told you to brown the butter in a saucepan before you add it to the mixture and add a bit of cinnamon to the mixture.

Now to try the low carb version.

I think pecan pie is my type 1 husband's favorite pie.

I made the pecan pie with vitafiber and it still raised his blood sugar to well into the 300s. Just unacceptable.
