I made this for Easter and instead of using the lemon juice I threw in a box of SF jello powder. It was good. Now I just need to figure out a strawberry or cherry sauce to go with it.

I am making a whole one with no crust, slice it up in bite size pieces and freeze. Its a wonderful late night snack!

I love the peanut butter one and pumpkin but want to cut carbs, calories.

I get Splenda headaches so this go around, I am going to try and make it with sf vanilla syrup and spices like cinnamon. Hope it works!

Stevie, if the syrup, which is sweetened with sucralose, does not give you headaches, then it's not the sucralose that is bothering you, but rather the junk they cut it with. Does liquid sucralose bother you?

Anybody make this using Swerve-type sweetener? Looking for a good (prefer great) cheesecake to make for Thanksgiving.

Or do you recommend a different recipe? I'm looking for a NY style cheesecake.

I make the Copy Cat Cheesecake Factory pumpkin recipe from online. I don't use a water bath to get more of the NY style consistency to it, and I use Confectioners Swerve. I normally make it without crust but for Thanksgiving I make the graham cracker crust for family and I eat around it. I love the confectioners Swerve, family can't believe it's not sugar.

I made the "basic cheesecake" using swerve/Splenda mix with raspberries with raspberry purée. It was fantastic. My family couldn't tell it was LC and asked me to leave the leftovers behind (also asked me to make it for Christmas). Definitely a keeper. Thanks.

I just had a brainstorm. You could bake a cheesecake in a roaster oven, putting the water in the pan of the roaster to make a water bath. I bake all kinds of things in my roaster oven. I put it on the patio and bake out there in the hot Phoenix summers. I even make my bread in it.

for a fruit topping I have used Polaner Fiber sugar free strawberry jam. It is very low carb and has a great flavor. I think they make a seedless raspberry, too.

I have seen mentioned in this thread as well as other places to not over-beat the ingredients because the result will be fluffy. But I WANT fluffy. I don't want the end result to have the same dense texture as the cream cheese before anything's done to it. So do any of you over-beat on purpose? Does it cause other problems I need to be aware of?

And also, I've seen nowhere mention just how long. Is beating it with your mixer for 4 minutes too long? Does that result in fluffy? Or is it not too much 'til you get up around 7 minutes? I can't find a number anywhere to shoot for. Just a vague "don't over-beat".
