I think I've tried them all and this one is by far the best tasting and the closest in texture to wheat flour pizza dough.

I wish I would have gone to WalMart in Pgh when I was there for the "flours" saving my space on here for the next time I venture to a store.... (we get Fresh Direct and not sure they carry oil or coconut flours)

it's pretty yummy, DH thought it was a lil dry, but he ate it HOURS after I made it and it had sat on the counter during those hours!

To tell the truth I won't be buying coconut flour anytime soon (if ever!)...HOWEVER, I'm thinking that adding 1/4 to 1/2 tsp. xanthan gum would do the trick of holding together the mixture without making it crumbly, and giving it a bit of elasticity. I use xanthan gum all the time in baked goods that are made without flour. I'll bet it would do the trick. Also for those who don't mind a higher carb count, I'll bet a tsp. of cornstarch added or even some psyllium would work too.

I just made this over the weekend and it was really good. I left out some of the cheese and put it on top instead and it was the best LC crust I have tried yet. Even DH said it was the best. And my 3-yr old daughter ate a big piece too!

I like that it is super easy to throw together and is super simple!

Thanks for sharing this! It was really good!! I flipped the crust over after it looked done and put it in for about 5 more minutes (got it good and crispy) used some lc bbq sauce, chicken, onion and a bit more cheese. Yum!

oh, I made this again and this time I used too much coconut flour so be careful! Only a little seems to do the trick (I used close to a tablespoon and it was just too much)

Yum! May have to make it today too (that would be 3 days in a row!) great for 2 meals!!

Just made pizza, and we loved it! The smell of this dough when you're mixing it, right down to when it is baking in the oven is awesome! My stomach was growling the whole time.

Tomorrow is Monday Company Lunch day, and I am in charge of ordering lunches for my co-workers. It's pizza day, and I usually dread pizza day cause I can't have any. I've got 2 pieces left from tonight's pizza, so I'm going to enjoy myself at lunch tomorrow

Just wanted to bump this again because it is SO good! I am having a bbq, chicken pizza for brunch today. YUM! I rolled out the dough (covered with plastic wrap) to make it cracker thin. Then I spread bbq, diced chicken breast & red onion, topped with cheddar. Delicious!

my aldi's sells almonds (not ground) for 3 something I bought those & made my own meal. It's a pretty good size bag of almonds I've made a few things out of the meal already. I'll have to try this crust.

What a pleasant surprise! I made this tonight and I was going for something really thin so I placed some plastic wrap over the "dough" like TxMom3 suggested and smashed it out.

I used 2 farm fresh, large eggs and mine made a 10" circle. I did have to add a couple of tablespoons of almond and coconut meal so it wasn't such a wet consistency. I also sprayed the parchment paper and the top of the dough with olive oil as recommended, with my oil mister.

I was thinking of crackers when I was mixing so I threw in some garlic powder and cayenne red pepper. I wasn't very liberal with it, so I don't notice a taste too much, but it's enough for some light flavor.

I love the texture! It is very bread like to me and I know it'll be great for pizza because it is very sturdy. Tonight I'm just going to use it with my leftover Easter Ham to make a sandwich.
