I couldn’t resist, had to have a bacon sandwich last night, yummo. And today I am having a tuna salad sandwich. I think the floopsies actually hold up better. They are def more spongy and not as ‘airy’ but I like it better I think. And they are easier to make, take less time to prepare, so I think I am gonna stick to this version.

Question: I?m dairy-free for right now, has anyone made these without the cream cheese? I know mayo is used in some of the other variations, but anyone tried it with Floopsies?

I made them once with an avocado instead of the cream cheese. It came out pretty well. I like mine sweet, so it wasn't as good a match for my needs. But I think it might be fine as a sandwich.

Soobee - how much avocado did you use? Was it 3 oz per 3 eggs? I tried oopsies with mayo and they were just too oily for my taste (and they had that funky top to it that sticks to your fingers). I'm dairy free at the moment and sure do miss oopsies. I don't mind if they're green, and I like them savory. TIA!

To the floopsie recipe I added....1 cap of vanilla and 6 pkts of Splenda.

The frosting:

4 oz of cream cheese
2 T of butter
4-5 pks of Splenda (I use truvia)
1-2 t of vanilla (I used 2 and it could've been too much)

Mix and then frost.

I make my floopsies in 4 inch quiche/tart pans. I have been doing that and they are about the size of English Muffins for breakfast sandwiches and turned out perfect for this little cake.

The way I figure it...it's about 4 servings and 1/4 of the cake was plenty....It was pretty darn good too...and fun to make.

BikerAng, I used 1 avocado per 3 eggs. It comes out to about the same amount of fat and calories as 3 T of cream cheese. Just mash the avocado and use in place of the cc. This was not my recipe. But I can't remember who to credit it to.

Just made them and my ds ate a bacon, egg, cheese, mayo sandwhich with them. he said they were good. i ate a piece with butter. only mistake was making them in a cookie sheet. i made a double batch but it was too thin on one end and too thick on the other. i guess my oven is not level. it was good though

Yes, they are in the Atkins 1972 book, people were sharing the recipe several years ago on LCF, just under the Revolution Roll name.

These turned out good. They are NOT light and airy, I just posted the recipe in the recipe room the other day. You could add splenda to sweeten, or Davincis, or even extract to change the flavor and they were easy. Less than 2 carbs each.

I tried it years ago trying to follow some of Atkins recipes for pancakes. I didn't like it, but I bet there have been a lot of recipes improved since the Atkins 72 recipes.

I tried it the other night with soy flour and I flopped at making floopsie's....lol. I'm gonna try again though without the soya.

Oh my! I made floopsies this afternoon. I substituted mayo (homemade with ELOO) for the cream cheese (no dairy for me) and baked it in a loaf pan. Mine took 35 minutes instead of 25, but THEY ARE SO GOOD! It does taste a bit like cornbread except smoother.

Thanks Prozak for posting this recipe. It's delicious.

how thick are all ya'll's floopsies? i made some this evening...finally...i used 1.5 tsp baking powder hoping for it to rise some. they ended up being only 1/4-1/2" thick...is this typical?
