Epically Good Caramelized Onion Dip

This is from the Real Simple website. I haven't made it YET but boy I'm going to!

Caramelized Onion Dip

2 tablespoons unsalted butter
2 medium onions, thinly sliced
Kosher salt and black pepper
1 8-ounce bar cream cheese at room temp
1 cup sour cream
2 tablespoons chopped fresh chives


Whatever you like for dipping

Melt the butter in a large skiller over medium-low heat. Add the onions and 1/2 teaspoon salt and cook, stirring occasionally, til deep golden brown, 30 to 35 minutes. Remove from heat and cool completely.

In a medium bowl, mix together the onions, cream cheese, sour cream, chives, and 1/4 teaspoon each salt and pepper. Serve with dippers.

Reviewers said: halve the cream cheese, and blend the whole works to chop up the onions into the dip. Use regular butter and only add more salt to taste.

Some amped it up with a pinch of cayenne or other seasonings. I'd probably add a pinch of garlic powder, cut back on the cream cheese and add a bit of mayo, maybe a couple tablespoons. Some didn't have chives to add to it and said the flavor was awesome anyway!

I may make this for Daytona 500 in a couple weeks, if I can wait that long!

I use that exact recipe, but add a package of crumbled bleu cheese. It's fabulous either way.

Oh now - *I* would love that addition! DH is not such a big fan of bleu cheese. Maybe I can have that dip all to myself this way! THANKS!

Half with Bleu, half without. It's easy to see which is which.
