OK, I've tried it now and while this recipe is a keeper, I'll be using the spicier versions of sausage and Rotel next time for a little extra kick. The onions worked out great in it.

Use the leftover beef roast to make beef pot pies, Carol. He'll never know it's "leftover." I make mine with a biscuit crust instead of a pie crust. No bottom crust. I precook my veggies in the microwave. For gravy I take half a jar of alfredo sauce, and add some beef broth bullion and a little Kitchen bouquet. I put the meat and veggies in a 1 1/2 qt casserole and mix up some carbquik drop biscuit dough. I drop teaspoon sized mini biscuits all over the top of the pie and bake it 30 minutes at 350.
