Current Favorite LC Cake and Cookie Flour Mix

I have really been enjoying this site. There are many examples of LC Cake and Cookie Flour Blends. What is your favorite? I have noticed that many of them have ingredients that are no longer available. I was looking to try Kevinpa’s recipe, but I am confused about what people are using as his last updated version these days.

Also, when I have the Mix done, is it a 1 to 1 for regular All Purpose Flour?

I use Jennifer Eloff's flour mix that I've included items such as powdered egg whites to use them up, adding in carbalose flour. If you'll google Jennifer Eloff, you'll find her site and see her flour mixes, they're terrific as is. I started throwing some carbalose flour into the mix I use because she said it improves the texture.

Here's is the original version, followed by my version and notes

1 2/3 cups almond meal, (400 mL; 182 g)
3/4 cup certified GF oat flour (175 ml; 100 g)
2 T coconut flr 3/4 tsp thick it up

Here's my final version of the above-always keep notes on what you do

1 2/3 cups almond meal, (400 mL; 182 g)
3/4 cup oat flour (175 ml; 100 g)
2 T coconut flr 3/4 tsp thick it up 1/2 c. carbalose flour
10/2017-started adding 1 T. + 1 tsp baking powder per batch
10/2017--add 2 T. egg white powder per above batch
10/2017-add 1/3 c whole spelt per batch

makes a terrific pizza crust using the "miracle dough" recipe

4/11/16...I started adding 1/2 c carbalose flour to the mix
I want to try adding 1 c next time-
10/2017- adding 1 c. carbalose flour to the batch works well

1-1 with AP flour, can't say that it is. I can't recall that we've seen anyone state a flr mix that we could tell you "just sub this for the AP flour". Reason is other things come into play, liquid in recipe may need to change, fats in recipe may need to change. Your best bet is to use recipes here that show a lc flour mix. It is very overwhelming to start with but you'll get accustomed to it.

this recipe says Kevin's flour but since then I've started using the above mix (Jenn's) but both work equally well for me. this recipe uses carbquik, which is carbalose flr w/ added fat flakes and baking powder, a great product. The sm. amt of flour mix in this recipe cuts the off taste of using just carbquik and does give me the texture I want. Picture is posted. HTH's to get you on your way

JJJ'sMom, do you still use the spelt with the latest version of your mix, since you've added the 1 C of Carbalose? If so, do you think it's necessary? I don't have that, and don't know what the carb count on it is. Thanks
