Creamy green onion chicken with roasted brussel sprouts and broccoli


Another not great pic, but I was in a rush. This meal was good in that it only took 15 minutes to make (brussel sprouts being left over). But the broccoli was frozen Green Giants and not good at all. I also wish I had made more chicken as I had much more sauce than chicken. I'll know for next time.

Zoodles with meat sauce

I need to learn to get the moisture out of the zoodles better. I tried salting them and using a paper towel but they still had too much moisture (as you can see in pic). Next time I will try oven drying them. Still tasted great although that is mostly because I love that sauce.

Taco pie with diced cucumber and tomato salad


If at the beginning of the year, someone had told me that I would be cooking this much I would never have believed them. I'm just not a natural cook. Thank goodness there are so many recipes online and I can mostly follow directions. Big thanks to those who share those recipes.

Chicken paprika with roasted broccoli

I couldn't get the sauce to thicken like the recipe called for. Maybe someone with better cooking skills could. Probably won't make it again even though it was very easy as it just wasn't great. It was still good.

Pork with caramelized onions and bacon and roasted cauliflower

Flash from camera kind of whited out the pic a little. So pic does not due it justice. Was delicious. But how can you go wrong with caramelized onions and bacon? You can't. Next time I make this I'll try and get a better pic.

It was really delicious! I used the Trader Joes brand jarred red curry sauce. I added some coconut milk to stretch it a bit. That was not too spicy at all! (I spiced it up with hot Hungarian paprika, and added lots of vegetables and diced chicken thighs. Yum!

1 egg
1/4 tsp salt
1/2 tsp baking powder
1/2 tsp vanilla

Cheesecake filling:
8 oz softened cream cheese
2 eggs
1/2 cup Ideal Brand granulated sweetener
1 tbsp vanilla
zest from 1 small lemon

Blueberry filling:
pint blueberries
1 cup Ideal Brand granulated sweetener
puree and then cook down on stovetop until thickened like jam

press dough into the bottom of the pan, pour the cheesecake batter on top, then dollop the blueberry stuff around the pan-- then swirl with a knife to make it pretty, then bake.

I actually crumbled some of the dough on top, but I don't think I'll do that next time-- you can make it very pretty with the purple swirls!

So, unbelievably delicious. We were all kind of stunned that it was low carb.

(approximate) whole pan:
calories: 2700
carbs: 56

(approximate) 2X2 piece:
calories: 169
carbs: 3.5
OMG some of these recipes and photos are AMAZING! So glad I found this thread!

So, here is a Friday night savior meal. I worked way too long today, and wanted something fast, and delicious. The wings and spinach dip are from Trader Joes, both really low carb. The "chips" are two Joseph's pitas, sliced, split and toasted. I ended up giving DH one wing and about half the chips and dip. Friday night happiness!

And Jolly, walk me through how you get the pics int the message?

The wings are 1 carb each, the dip is one carb per serving. Frozen aisle for both. Thanks for the pic direction! I will try that next time.

mmmm breakfast. Love it. Have you tried the Black Forest bacon from Trader Joe's? It is so good. A little expensive so I only use it for eating whole bacon slices not in recipes.

I've eaten a lot of repeats and leftovers lately. But I'll have something new at some point this week. I need to check the camera as sometimes I forget to transfer pics over.

It was SO good. I am not really a recipe gal, because I make them up as I go most of the time, but I will give it my best shot:

Chicken/asparagus/almond combo
1 lb chicken breast tenderloin
1 1/2 lb asparagus (I love asparagus- you could use more or less, or any other veggie combo here- see? no recipes...)
1/2 an onion
1/2 C sliced almonds

I sautee'd the chopped onion first, in red palm oil (I got it at TJs, and like to use it in stir fries, but any oil here will do). I chopped up the chicken in to bite-size pieces, and added. Stir fried the chicken until almost done, and then added the asparagus. Covered and steamed until al dente. Seasoned with salt and pepper. Stir in almonds.

Stir fry sauce:
2 C chicken broth
1 C soy sauce
10 drops fish sauce
3 T rice vinegar
10 drops sesame oil
ginger and garlic (I have a jar of crushed ginger/garlic I get in the produce section)
A sprinkle of stevia
Chipotle powder

Stir together all the ingredients in a sauce pan. Simmer, and thicken with your favorite thickener. I used a shake of gluc. These ingredients are estimates- you can change it up to your taste.

Pour the sauce over the chicken and asparagus.

Cilantro Lime Rice:
(This is a blatant remake of lots of recipes on the web)
1/2 head cauliflower
1T coconut oil
Chopped cilantro
1T minced garlic
1T lime juice
1/4 C chopped green onion

Rice the cauliflower (I did it in my VM because it is the easiest way I have found, but a food processor or a box grater work too). Heat a frying pan or wok and put add the riced cauli. I stir fry it dry for a few minutes, to get the excess water out and dry it out to a more rice-like consistency. Add the coconut oil, cilantro, lime juice and garlic, and stir fry until it is heated through. Stir in green onions, season with salt.

This post makes it look more complicated than it actually is. I did meal prep Monday night, and had my cauliflower riced, all my veggies and chicken already chopped, and this all came together in about twenty minutes.

I just wanted to say.... oh wow!

I will be looking at each and every one of these replies. The food looks so good.

I really wish I could eat eggs, I feel like I'm missing out lol. I can eat egg whites though, so I can still kinda eat it.

Chicken salad: mixed greens,chicken, a few sliced strawberries, feta, chopped red onion, crushed almonds, evoo and bv. Some combo of these flavors is dinner during the summer at least once a week, varying protein, cheese, and fruit.
