Cauliflower oatmeal recipes

I am late trying this out, but this is my new favorite low carb meal!

I don't really follow a recipe, I just put a bunch of ingredients in the bowl and microwaved until it was thick enough.
I added riced cauliflower, almond milk, heavy cream, almond flour. For flavor, cinnamon, vanilla, bay leaf. Sweetened with vita fiber syrup and liquid Splenda.

I've seen some recipes using eggs, is there a reason for use of eggs here?

What is your favorite recipe?

I think the eggs would make it more like a rice pudding.
