Oriental Salad

Oriental Salad

1 large Nappa (Chinese cabbage)
6 green onions
˝ cup chopped parsley
1 cup toasted slivered almonds
1 cup toasted sunflower seeds (salted or unsalted – I used unsalted)\
2 seasoning packets from 2 Mr. Noodle Chicken soup – throw out the noodles


Dressing:
1 cup oil (olive or veggie or canola – I use peanut oil
6 teaspoons tarragon white or red wine vinegar
Ľ teaspoon salt
3 packets Splenda
The 2 pkgs of chicken stock –(that came with the noodle soup mix (see above)

(once I subbed 1 bag crushed pork rinds for the noodles but still used the seasoning of course – can’t remember if I liked this, but I didn’t make a note of it. And today I added a package of broccoli slaw because the Nappa cabbage was very small.
Stir this salad from time to time to keep it all moist. Flavor gets better after a few hours.

We love this salad.

Hi. No I am not at all good at mixing up my own seasoning blends - I'm a recipe only gal. I don't use the noodles themselves at all in this recipe and Mr. Noodle soup pkts. really aren't at all expensive, I don't think. Perhaps they have stuff in them though that you can't have. I haven't even read the label - I just know that it doesn't knock me out of Ketosis and I eat very little of this. I only use this particular seasoning when I make this salad.

I'll definitely read the list of ingredients next time then. But I think there is some kind of seasoning in it.

Thanks, Islegirl, for reminding me of one of my favorite salads from years ago. It never occurred to me that I could make it low carb without the noodles. My recipe is a little different so I thought I'd post it. I first toasted 1 cup of sliced (not slivered) almonds and 1/2-3/4 cup of sesame seeds in 2 tablespoons of butter. I left out the sunflower seeds (1) I didn't have any and (2) they weren't in my original recipe. I'll add them next time but I think the sesame seeds are necessary as they really add another layer of flavor. I store everything separately since the dressing and the nut mixture will last forever in the refrigerator and you can just chop up fresh cabbage (or use a package of slaw mix) as needed. DH really liked your use of Nappa cabbage as its flavor is milder than regular cabbage. I love this board with all you clever folks who make living the low carb lifestyle so very doable! ~ Linda ~

I think you could make this with packaged cole slaw mix.. I definitely need to try this..

For two, I would cut it back as it probably is best for one or two days

Carolyn, as long as you store everything separately and put the crunchies and the dressing on each individual salad right before serving and not on the whole bowl of cabbage it'll last as long as your cabbage lasts.

Think I'll try with onion powder, garlic powder, a bit of nutritional yeast, a little chicken broth powder, and white pepper. Might need some sweetener, too.
