Last night's Chicken Stir-fry
2 or 3 boneless skinless chicken breasts
Juice of 1 lemon
2 Tbsp oil
1 – 1 ˝ seasoning salt (I use Lawry’s)
Cut chicken into strips or bite-size pieces. Cook in above mixture on med-high covered ‘til cooked – about 5-7 minutes. Remove cover and continue cooking and allow liquid to disappear and chicken becomes slightly browned. About this point, just before it gets a bit brown, I add 1 chunked onion and 2 cloves minced garlic.
Then mix together 2 Tbsp each – Zesty Italian Salad dressing (I use Kraft)
Add this mixture to the chicken in the frying pan.
Then, add your veggies of choice. I use 1 carrot (which I pick out later just in case too many carbs), some broccoli, cauliflower, red and/or green peppers, mushrooms. You could also use snowpeas and zucchini and green onion – whatever suits you.
Cover pan and cook veggies to desired doneness. Easy peasey and we love it. Sometimes I think I should double all the liquid ingredients too - if someone wants to put it over rice or cauliflower. I just never bothered and I don't eat rice!
