Do any of you remember Widget? She made wonderful recipes using
pork rind flour. Here's one of her recipes. We enjoyed the biscuits!

Preheat oven to 400 degrees.
Oil 6 wells of a muffin pan (I have 12 wells, and I put
a little water in three wells on each end. Oiled the 6 wells
in the center. It worked beautifully.
Place Dry Ingreidents into a bowl mixing well
3/4 c. blanched almond flour
1/4 c. + 2 tbs. pork rind flour (approx. 1/2 oz.)
1 tsp. baking powder
2 pkg. Splenda
4 oz. cream cheese, softened
2 eggs, beaten until frothy
Stir softened cream cheese with a fork,
then stir in the eggs until well blended.
Stir in one half of the dry ingredients and
mix well, then stir in the last half of the
dry ingredients. Stir well.
Fill six wells and bake for about 12 minutes.
They turn a pretty golden color. Eat and enjoy!
I froze what was left.
