Mushroom Ricotta Pie
2 boxes mushrooms, sliced, about 1 pound 1 medium onion, diced Sliced green onions, not sure how many 1 tablespoon olive oil 1 pound ricotta (I use whole milk) 4 eggs 1/2 cup parmesan cheese Salt and pepper to taste Preheat oven to 350ºF Grease a 9" pie plate Sauté onions and green onions in oil over medium heat. Add mushrooms and cook until all the liquid has evaporated. You don't want a soupy custard. Set veggies aside to cool. Mix eggs, ricotta, and parmesan cheese, and add sautéed veggies. Pour batter into greased pie plate and bake at 350 for 50-60 minutes. From Carolina |
