Eggwhite psyllium waffles--JUDDDish recipe

I originated the eggwhite psyllium wrap here at LCF several years ago. I just made that recipe in the waffle maker and it was so great! You can either eat these as a sweet version or use them as sandwich bread.

I just made a tuna sandwich Made the waffles using the original recipe and then spread the waffle with laughing cow lite and then topped with a pack of tuna, folded over and ate. YUM.

Very low carbs and calories and fat. Great for a JUDDD or PMSF

Yummy- I just discovered some stevia sweetened chocolate chips locally, now I want chocolate chip waffles.

if you wanted, you could also add sweetener to the original recipe. Some people have also added flax.

Original recipe: 1 C eggwhites, 3 Tbs psyllium powder (I use TJs) stir and let sit till thickened.

could add many different things to this base. If I am using the waffle as bread, I often add savories like garlic powder, S&P etc

Make sure you spray (Pam) the waffle iron well so it doesn't stick.

Thanks for the recipe! I may try it tomorrow with some rosemary and garlic, or some chocolate chips, depending on what I'm in the mood for. I love simple, versatile recipes like this!

I haven't tried it with only flax, but anytime you're adding something to egg whites you generally get a slurry you can use in a waffle iron

Carly, yes--I've made this as a pancake and as a wrap many times. I must say however that it seems even better as a waffle. I have around belgian waffle iron, and the resulting waffle makes great bread for a LC sandwich--

.5 cup egg whites
1.5 Tbs psyllium powder
.5 Tbs cocoa powder
4 drops ez-sweets

This made a nice size pancake in a skillet sprayed with Pam.

This was delicious for 35 calories and reminded me of a chocolate chip pancake.

I made this again last night and I thoroughly enjoyed it. I used some sugar free pancake syrup and it felt like such a treat on a DD.

How much Pysillium do we use for the pancake if it is husks not powder?

Goal range 143-149.8 lbs

Been in maintenance for 3.5 years+ (Not perfect)

Juddd Maintenance: Juddd + OMAD Lifestyle (One Meal a Day) One main meal a day with "snack" inside a 4-5+ hour window on both Up and Down days

Ahna, I'd try it with the same proportions. If you let it sit for a minute and it is too thick, just add a little more eggwhite and then cook while it is thinned out enough.
