Low Carbing Among Friends!

I'm so excited....I just treated myself to the entire 5 book series by Jennifer Eloff and friends.....I'm gearing back up to do a lot of cooking in 2014 as I'm getting a little tired of the same old recipes! I ordered the coil bound books so they will lie flat on the countertops.....

Do you use these books, and if so do you have any favorites?

First off...I have not been on these boards in a while since hitting maintenance but Marieze, girlfriend, you look AWESOME!!! Love your avatar and congrats on the loss hun!!!

I know what you mean about trying new recipes. My hubby started induction today so I am using his go round (he does this a few times a year to get those nasty few pounds off) to try new things out.

Subbing. I also got all 5 books for myself last month. I have made a few things in them so far, but would love to hear what others enjoy. The family favorite so far is Meyer Lemon Curd Bars, p. 191 in volume 1. But I need to find more everyday meal type recipes rather than desserts!

Bailey and Charski, thanks for the compliments! I'm blushing! I love nothing more than to sit down somewhere quiet and plow through a cookbook! To have 5 is just crazy!!! I'm really excited.....I'll post any suggestions I have once I get the books and start crackin'......

THANK you, Marieze! I get excited about the books all over again through your enthusiasm! We have some exciting stuff planned for this year too. I also prefer coil-bound cookbooks, but believe it or not, many people don't. Go figure! They say that they rip them too easily. Perfect bound cookbooks need a little friend (a perspex book holder) in the kitchen. I do envy you a bit actually. I cannot enjoy the books as much as you will, no doubt. I have to keep creating new recipes and don't really have time to try other people's/ authors' recipes. It's not a great state of affairs, but believe me, when I retire, I am going to have FUN and try many of the recipes I have been longing to make.

I think the newer books (smaller and by category, not by author) complete with many photos, are a step up from our initial efforts.

Thank you, too, Mistizoom for your support of the team's work for the low-carbing community.

Thanks, Char...I'm pretty sure your talents outweigh mine, so that's high praise coming from you! You're a good friend and I appreciate you.

I don't post a whole lot on here anymore. Time is a factor for me as Facebook and my blog and Pinterest keep me very busy. Also, I know my recipes only appeal to a certain percentage of low-carbers (I am a moderate low-carber - meaning I like to use my Gluten-free, low-carb bake mix, which contains some oat flour (heck of a lot better than wheat flour health-wise, as it helps lower cholesterol), and I noticed my posts were not being visited that much anymore on LCF's. This is why it is really great that I'm part of a bigger team of talented authors who fill in the gaps...i.e. many or most of them are strict low-carbers in every sense of the word. There is something for everyone! That's the way it should be.

Jen - can I still order the coil bound books from you? I tried but it didn't seem to work, I must have done something wrong. I was using my Kindle, maybe that was the problem?

I have volumes One and Two and the recipe I like the very most is Turkey, Spinach and Feta Burgers by Lisa Marshall in Volume One. I also fixed the Anti Pasto Salad by her (also volume one) for a large summer barbeque and it was a big hit.

The Cream of Mushroom Soup by Maria Emmerich in Volume One was so good that it made me try another soup by her and now the Tomato Gorgonzola Bisque is our favorite soup, hands down.

In Volume Two, I made the Broccoli and Goat Cheese Souffles by Maria Emmerich and it was fabulous. Can't wait to make it again.

I'll be anxious to hear what recipes you especially like.

I am grateful for all of your replies! The recipes suggested make my mouth water....my son and I are VERY hig soup eaters.....that tomato gorgonzola sounds amazing!

Jenn.....whatever you do.....don't stop! Having these cookbooks is truly a gift for everyone. I, personally, don't eat wheat but do use oat flour if a recipe calls for it. But truly, these cookbooks are a blessing and I get giddy awaiting their arrival

Tweaker, I just checked for you. Seems fine. Couple of tips: you need to type in the quantity and then go down a bit to coil bound and click on the circle.

Whoo Hoo!!!

Received all 5 of my cookbooks yesterday and this was me

Well, this morning I had to spend 2 hours at the DMV and I put 2 of the books in my bag and had a field day looking at all that deliciousness!

We're going to get hammered with rain tomorrow (sorry Charski) with winds between 40-50 mph so I just might try a few!!!!

I got vols 4 and 5 several days ago. LOVE the new layout, by course/food type, instead of by author. Way easier to decide what to make, as you can look at all the, for example, soups, in one section, instead of having to flip all through the book. Can't wait to try some things.

I noticed it looked like all the page sizes "shrank" in vol 4 & 5. I prefer the text size in the first three volumes.

My books came yesterday and I have made Easy Cheesy Biscuits by
Carolyn Ketchum page 127 volume #4. Tomorrow I would like to make
Chef Stella's Spiced Whoopie Pies and Jen's Cheese Biscuits.
I love my books! We thought the biscuits were light and fluffy and
tasted good. Before you slice them, let them cool just a bit.

Would love to have a cave where no one could find me and I could
just read my little heart out.

I will report on anything that I make from the new volumes.

I received my Vols. 4 and 5 yesterday also. I'm having fun looking through them, but I haven't made anything yet. I look though all the recipes then I go back and choose the ones that appeal to me most and highlight them in the index; then as I prepare them I note any changes I make on a sticky note that I put on the recipe page. After I've tasted/served the recipes I go back and mark both the recipe itself and the index with my star ratings!

Jen, I would like larger print better, old eyes!

I only have Volume 1. I do plan on getting the rest in the series though.

Jennifer I just made your BBQ sauce from page 54 vol 1. It is good! My favorite thing about your recipe is that is uses tomato paste as a base and not LC ketchup which so many other recipes do. I can buy a can of tomato paste for $0.25 on sale but that LC ketchup is around $3.00! I also liked that I didn't have to cook it. Well done! I can't wait to try it on my BBQ ribs. I'm precooking them in a slow oven now.

I made Chef Stella's SPICED WHOOPIE PIES

VOLUME 5 PAGE 174

They are delicious!

In the butter cream frosting, it calls for 1/2 c. sugar sub.
I used powdered Swerve and found it to be too sweet (not a word that I
ever use) so next time I will start wit 1/3 c. and go from there.

I'm happy for you, I just ordered them today & then found out I couldn't get them because I live in Canada.
I downloaded them to kindle but that's not very good as you can't print them out. Enjoy!
