Need a cheesecake recipe

I have been off these boards for a while and came back looking for a New York style cheesecake recipe, only to find the recipe room gone. Can anyone help me??

Not sure how low you are going to try and get the carbs but... this one looks decent.

I've made this one a few times and really like it. I can't remember where it came from because I used to make the higher carb version and tweaked it.

New York Cheesecake

INGREDIENTS

Crust:
1 1/4 cups almond flour
1/2 cup coconut flour
2 to 3 tablespoons Sukrin Gold (or any granulated sweetener)
5 tablespoons butter, melted

Filling:
4 (8 oz) packages cream cheese
1 1/2 cups granulated sweetener
3/4 cup half & half
4 eggs
1 cup sour cream
2 teaspoons vanilla extract
3 tablespoons almond flour or 1 tablespoon coconut flour

DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch springform pan.
2. In a medium bowl, mix almond flour, coconut flour and Sukrin Gold with melted butter. Press onto bottom of springform pan. Bake 10 minutes and set aside.
3. In a large bowl, mix cream cheese with sweetener (s) until smooth. Blend in half & half, and then mix in the eggs one at a time, mixing just enough to incorporate. Mix in sour cream, vanilla and flour until smooth. Pour filling into prepared crust.
4. Bake in preheated oven for 1 hour or until set and middle jiggles slightly (May take slightly longer than 1 hour). Turn the oven off, and let cake cool in oven with the door closed for 5 to 6 hours; this prevents cracking. Chill in refrigerator until serving.

I like to make a fruit compote and spoon on top. Delicious!

The last one I made was New York Style Ricotta Cheesecake, no crust, and it was delicious. It's a George Stella recipe.

There are a lot of recipes for cheesecakes on this board so you can do a search and check them out. Beachgirl's cheeseckes are very good.

How long will these cheesecakes keep in the fridge?

My husband and kids love cheesecake, but I don't think they'll go for a low carb version. Wondering how long it will stay fresh if I'm the only one eating it. Maybe I'll need to modify it and make a mini version just for me

Cheesecake freezes very well. Portion it, wrap the pieces, freeze them, and then thaw as needed.

My cheesecake is very popular

Anita's Low Carb Silk Cheesecake
Pre-baked cooled low carb crust needed
(new edits: 1 cup almond flour and 1 cup ground pecans)(recipe in another post in this album)

Ingredients
1 cup heavy cream
3--8 oz cream cheese -- packages
1 tbl vanilla extract
*new addition 1/4 cup sour cream
*new edits: 1/4 cup swerve and 17 drops of ez-sweets or 3/4 Splenda granulated but has more carbs
1 tbl butter
I packet unflavored knox gelatin

In 1/2 cup boiling water sprinkle gelatin in cup, stir till no lumps set aside

1 cup heavy whipping cream beaten stiff in separate bowl, set aside

in another bowl put 3 room temperature cream cheese (8 oz each) 1 tbl melted butter, 1/2 tbl vanilla, 1 tsp lemon juice 1/2 cup granulated splenda or 18 drops of liquid splenda (my preference) Add gelatin and mix till smooth

Then drop by spoonfuls the heavy whipping cream folding slowly till well mixed. Chill well before serving

Yield:
"1 piece"

Almond Crust
2 cups crushed almonds or almond flour or
1 cup almond flour and 1 cup ground pecans

2 tablespoon melted butter
1 egg white
¼ cup granulated splenda... or 4 drops of liquid splenda

Mixed together and press into sprayed pie pan (I used a springform pan bottom covered with reynolds non stick aluminum foil) Bake 10 minutes at 350 degrees
