How to Fry Stuff - LCHF style

I found a mini-fryer - new - a FryDaddy electric one today for $6.99. I decided for that price, I would try it out.

I have never fried anything in a fryer . . .

I am thinking about doing string cheese and maybe chicken . . .
But what kind of oil can be used?
Which oils can get that hot, that are still good for this way of eating?

And, other ideas on things to fry?

Overall, I eat Optimal Ketogenic, which has a lower fat style with more protein, but am now going strict Atkins Induction style again to lose my final 20-25#'s, as that is how I lost the first 45. So for a while at least, I can have the deep fried stuff, in moderation. :-)

Yup, peanut oil is what I normally use. I prefer rice bran oil but it's more expensive.

If you can get unhydrogenated lard or tallow, those are great choices!

I read online that coconut oil will work. I thought it didn't. That is good! I always have it. ;-) I am allergic to rice, but may try the peanut oil. :-)
