Eggless Microwave cakes/muffins

I was having a wicked craving for red velvet cake last night but did not want to make a whole cake in the oven, I am not fond of microwave cakes. They always taste spongy or rubbery to me. I decided to search for a recipe for a microwave cake to satisfy my craving anyway and came across some high carb recipes that called for no eggs. The rationale was that eggs was the reason for the spongy/rubbery texture of microwave cakes. I gave it a go and I have to say that I liked the texture of the eggless micro cakes way better than one with eggs. Anyone else do this?
