Mashed Cauliflower Potato Salad

I usually make my potato salad with cauliflower pieces. Tonight I mashed up the cooked Cauliflower, added diced onion, celery, and green pepper, hard boiled eggs. (Cut up), and Mayo.

It was much better tasting. You could also add cooked bacon.

Sounds great Carolyn,

About 10 years ago DH and I were walking at the harbor
and I was thinking about my left over mashed potatoes.
Came home and made it into potato salad. Sent the recipe
off to the home town newspaper food editor and received
a check for $25 bucks and the recipe written up in next
weeks column. That was the biggest thrill I ever had sharing
a recipe. Your tater salad sounds delicious and I have 2
cups of cooked cauli from last night's dinner. Tomorrow
I'll use your recipe.

I have some cauliflower cream cheese puree in the fridge right now. I think I'll do some add ins like green onion, chopped radish, and HG egg.

I love potato salad so I'm glad I found your post.

what a wonderful application of cauliflower.

I will try it as soon as I can. although I will not mash the CF, I will cut it into very small pieces like the PS I know and love, but do not consume any longer. I am too busy this week, but I WILL report back before month's end. Bon appetit! Love & Profits:: FLATFERENGHI

Thanks, guys..My motherinlaw used to make potato salad when she had leftover mashed potatoes, too, Barbo..

I like this better than the chunks of cauliflower..

Great idea!

I could see using mashed cauliflower to allow you to reduce the amount of mayo needed for a lot of things. Mind you, I am not fat phobic, but some folks need to watch their calories. I may give it a try next time I make tuna salad.

I am also thinking the mashed cauliflower may be helpful when making crab cakes.
