Widget's Biscuits

Hi all,

I made these biscuits today with a minor tweak.
We think that they are delish and so easy to make.

Widget was a valuable member of this board and she
is certainly missed. Come back where ever you are!

Widget's Biscuits
Preheat oven to 400 degrees
Grease a 6 well muffin tin
In a small bowl mix the dry ingredients:
3/4 c. almond flour
*1/4 c. + 2 tbs. pork rind flour (crush them in processor)
2 tbs. oat fiber (this is my tweak)
1 rounded tsp. of baking powder
2 pkg. Splenda (this off sets the saltiness)
4 oz. softened cream cheese
2 eggs

Beat cream cheese and eggs together until well
incorporated. Mix the dry together very well and then
add to wet ingredients. Place evenly into the 6 wells
and bake at 400 for 10-12 minutes or until golden.
Butter and eat! No guilt. So good.

*For anyone who does not like pork rinds, these biscuits,
do not taste porky. Just go ahead and try these.
P.S.
Make some good LC sausage gravy to go on top

Will try the biscuits, and I like your oat fiber addition. Have made Widget's Zucchini Bread numerous times. I tried another Zucchini bread recipe recently, and we prefer Widget's recipe. Also like her hamburger buns, and will try adding oat fiber to those next time.

Luv 2 Loose, I saved Widget's recipes, and made several of them. She last posted on 10-18-2013 on Friday's Roll Call. I hope that helps you. Also, most of her recipes were posted two years prior to that date.

Diane, there are a bunch more. Just go to advanced search, put in Widget as both the keyword and user name, and search in Low Carb Recipe Help & Suggestions, and they all come up. If you are having trouble with the search function, just let me know which recipes you are trying to find and I can locate them for you.
