ITS HOT! But good. I added some shrimp and put it over Shirataki noodles. YUM-O

Quick Peatut Butter Cookies

4 eggs
1/4 cup splenda
4 tbsp peanut butter

Mix all ingredients. Form into balls and cook at 400 F for 10 minutes. Enjoy!

I tried making this last night and either I failed to understand how to mix it, or the amounts are off.

After mixing all the ingredients, I ended up with a soupy pb and egg mixture. It was far too runny to try and form into balls. I thickened it up with flaxseed, but didn't account for the sweetness factor. If I had added additional splenda, these might have been ok. Unfortunately they ended up in the garbage.

It's suppose to be a 1:1 ratio. You could add flax to the recipe for added health benefits as long as you keep it a cookie dough consistency.

1 cup peanut butter
1 cup granular Splenda
1 large egg

Ahhh, thank you for clarifying. I guess the amounts posted were off which would explain the consistency. I only added the ground flax seed to thicken up the batter for baking. In the future I'll be making these according to your recipe.

I add 1 tsp of vanilla.These are great warm/fresh but lose something when you store them at room temp. Anyone tried freezing leftovers?

Actually different peanut butters are different in thickness & liquidity. You may need less or more PB. And of course eggs are different sizes.
Tho this is a 3 ingredient thread, and these "magic peanut butter cookies" are good, I myself almost never use grandular Splenda anymore (personal preference). And I've found that I like the recipe better with some other added ingredients. The way I like to make them would be a far cry from a 3 ingredient recipe tho. With only the 3 ingredients (and you can use the concentrated liquid splendas ie: ezsweetz) they are good, but quite brittle. Just an FYI. NOT knocking the recipe!!!!

Regarding the Peanut Butter Cookies, I have learned that if I let the cookies remain on the pan until they are totally cooled off, they are not crumbly and falling apart like they are when they are still warm. Patience!

I cooked a whole turkey and decided to make a turkey casserole out of the leftovers. So the other day I made this and I really enjoyed it. I didn't really measure.

cooked turkey
half to 3/4 frozen asparagus stir fry veg (has squash, mushrooms and green beans, etc)
mayo
cream cheese

Enough turkey to cover the bottom of a 9x9 pan. Mix in cooked veggies and two big spoonful of mayo. Stir well and cut in six ounces cream cheese. Bake in 325 oven until bubbly. When I took it out, I had to stir the cream cz to mix in and put it back in for about 5 min.
