Chicken Pizza

I love this thread! I've written down at least 10 recipes... my kids are going to love cheeseburger salad! HA!

Here's my contribution...

I just can't do the whole egg/cheese wanna-be crust, sooo...

4-6 Chicken cutlets (those are the super flat chicken breasts)
Pizza sauce
Mozzarella Cheese

1. Bake the chicken cutlets in a Pammed pan for 20 minutes at 350, or until cooked through. (These are great gems to have on hand anyway)
2. Top with a little pizza sauce and cheese.
3. Broil on LOW for about 5 minutes or until cheese is melted.

**You can add pepperonis, mushrooms, green peppers, olives, even crumbled italian sausage.

***For an even lower-carb try on it, use alfredo sauce (with spinach and feta) instead of red sauce with traditional pizza toppings.

This is a recipie I have been doing for years. It actually has four ingredients, but I couldn't resist sharing. It was from the Frugal Gourmet (remember him) It was so odd, I had to try it. I was young at home with my parents and sibling at the time, and everyone loved it. Made it at least every other month. Just adjusted it for LC. Don't let the ingredients scare you, it's delish!(and I HATE sauerkraut, even on a reuben, but I love this).
skinless boneless chicken breasts (sliced work best for this)
sauerkraut (no sugar added)
low carb thousand island dressing
swiss cheese (thinly sliced or shredded)

Place breasts in an oven pan to cover the bottom. Cover with about 1" of sauerkraut, then fully cover all sauerdraut with thousand island dressing. Cover completely with foil (sealing to the pan). Bake at 350 until breasts are done (usually about 25-30 minutes). Remove from oven, add cheese to top, replace foil let sit for 5 min (I leave mine on the top of the stove, but I guess you could put it in the turned off oven) and when cheese is melted it's ready to serve. I enjoy mine alone, but for my family I do yams on the side.

Almost every dressing commercially made has sugar in it. I make all my own salad dressing. Here's the recipe I use for Thousand Island.
Thousand Island Dressing
1/2 cup mayonnaise
2 tablespoons LC ketchup (check the ones in recipies section)
1 tablespoon white vinegar
2 teaspoons splenda (or liquid no carb sweetner equivalent)
2 teaspoons dill pickle relish
1 teaspoon finely minced white onion
1/8 teaspoon salt
1 dash of black pepper
1 tsp finely chopped red pepper
Combine all of the ingredients in a small bowl. Stir well.

Place dressing in a covered container and refrigerate for several hours, stirring occasionally, so that the splenda dissolves and the flavors blend.
