I eat it everyday after my workout. According to Drs. Phinney and Volek, the carbs are based on the original milk content, most of which is disgested by the active culture, forming lactic acid (which gives the tangy taste). So really you should count around 1/2 the carbs. This was discussed in "The Art and Science of Low Carb Living."
