I just found this thread too! Wow - what great ideas! I can't wait to try a few of them!

Here's one of my favorite staples, that I make over the weekend, then snack on all week long. It's from Dana Carpender's 500 Low Carb Recipes book:

Joe (that's it - just "Joe")

chopped onions
Fresh spinach

Brown hamburger with onions and seasonings. Drain (or not). Scramble in some eggs. When the eggs are done, throw in a whole bag of fresh baby spinach. Cook and stir until the spinach is wilted.

That's it! Very easy, and yummy! Sometimes I'll sprinkle some parmesan and/or worchesteshire sauce on it before eating.
